| I've been busy with my pumpkins. They're fairly easy to do but the oven is only so big so it's time consuming. Found a great collection of pumpkin recipes (posted about it in Food Chat) and so I want to go buy even more pumpkins! Meals haven't been fancy: poached egg on baby spinach with a dollop of Bernaise sauce for breakfast, lunch was salad with some freshly roasted pumpkin seeds in it. Dinner was Jamaican Jerk salmon that I posted about over on Induction suppers. I broke down and bought some xylitol today at the natural foods market. I really really don't like to use Splenda and don't care for the aftertaste with stevia so I'm going to try the xylitol. I've become very used to things being sweetened only by the sugars in berries/veggies but a few things I make could use just a bit of sweet. Maybe a pinch or so. I'm curious to see what I think of it. ETA: Forgot...I also had a little tenderloin tip leftover and had that at lunchtime too with a smidge of Bernaise on it.

| I did a zuchinni dish: Browned 1/2 lb ground beef. Then added my zuchinni and summer squash that I had sliced up. You can add onions and green peppers in there somewhere too. I dont' like them, so keep them out. Add 8 oz tom. sauce (I used more..close to 2 cans) and season with salt & pepper, basil...whatever else you like. Cook til you are happy with it (I like my squash pretty soft). Sprinkle chedder cheese over all. It was yummy! |

| Breakfast was an egg, spinach, feta and pine nut (pignolis) concoction. The recipe called for it to be baked like a custard but hey, I needed breakfast NOW so I prepared it in a non-stick pan on the stovetop. Blend eggs, a splash of cream, baby spinach (I used my Magic Bullet blender). Add feta and give it a quick pulse. Stir in pine nuts and cook in butter like an omelet/frittata. I had it with a sausage pattie and a slice of tomato on the side.

| Yesterday I had some strawberries with cream and mixed nuts (Brazilian nuts, almonds, macadamias, walnuts, cashews, hazelnuts) for snacks throughout the day. Breakfast today was a boiled egg, Brie, cherry tomatoes, green pepper strips with mayo... which is the only LC, sugar-free dip I could find, and sheep milk yogurt. I'll have mixed nuts for a snack. Not sure what lunch and dinner will be... The meals I didn't mention above are Induction-legal. Since I'm not home, they are whatever I can make fast and doesn't require a lot of preparation: boiled eggs with salt & pepper, tuna salad... this kind of stuff.

| My stomach finally settled down. I've been eating so much chicken soup (plain chicken soup, chicken soup with some rice, chicken soup with some oat groats, etc.) this week...I think I'm growing feathers! Well, I'm off to the market today to see what I can find (hopefully it won't be chicken!)

| Had lunch at the university cafeteria and they served some salad with kidney beans, so that's what I had. Dinner was an ounce of Brie and a few cherry tomatoes.

| Okay, I got a toaster oven. I botched the rotissere a bit but it'll still rotissered a bird. So far its chicken. I put country-style ribs in but they arn't done yet. I'm gonna eat broccoli and cheese later. I'm out of salad stuff, and fruit but I'm just gonna suffer threw it til grocery day. Right now I'm so into having an oven, I'm just trying out all the ways I can cook meat again in it. I lost a pound this week even though I ate some spit pea soup a couple of days. In fact, I cheated and ate two peaches and some grapes. I moved myself up to rung 7 and just said I'd call it legal from now on if I was going to do it and loose a pound. If I stop loosing I'll give it up again. I haven't run out to the store to get more and suddenly it doesn't seem so important, hmmm. Funny how that works on me. Gonna sit here awhile and see how it goes.

| Spit pea soup sounds like it could be very low on carbs I did not do much exciting OWL food day today. It was mostly bare boned. I had one of my favorite things though: Whey shake (with coffee, cocoa, cream and whey powder) I LIKE it. |

| Isn't that what you get if you upset the waiter at a posh restaurant?!?!? I went to a WRAC reunion lunch and managed to stay on plan by not eating some of the set meal ingredients I had a few melon slices with half a strawberry as a starter Then roast beef (no yorkshire pudding, roast potatoes or gravy) with brocolli plus the water cress garnish off the serving plate (that most people refused to take) with a couple of pats of butter on top of the brocolli. Finished up with cheese and a few grapes and pieces of celery from the served plate of cheese & biscuits (crackers) and got out my small tupperware container with a few squares of almond/flax bread from my bag to eat with it. I probably ate too much - more than I usually eat at lunchtime - but all on plan for premaintenance.
