| Instant is too processed, really. Dr. Atkins didn't recommend it ... he preferred steel cut oats. If you only have 20 pounds to goal, why are you still on Induction?

| If you soak it over night it can be quick. The glycemic index on instant oatmeal is higher than regular oatmeal. It think because the fibre has been broken down - it would cause a bloodsugar reaction in many. I have not tried oatmeal yet - only in muffins and bread Maybe you could bring crustless quiche - a premade minute muffin or other muffin. If oatmeal does not work out. |

| I read in a Scottish cookery book that the old trick of making an "instant" oatmeal breakfast was to cook the oatmeal, then pour it into a drawer and let it cool. As it cools it solidifies. Then whenever they wanted oatmeal they would scoop out a portion and mix it with hot water---voila, "instant" oatmeal the way they did it before the packets. For modern kitchens, you cook enough oatmeal to last you a week. Then pour the cooked oatmeal into a food container. Use either a large one or into individual portion-sized containers. Store them in the frig. Bring a serving with you to work. Pop into the microwave to heat. Then eat. Another thing I do is have the slow cooker cook the oatmeal for me: dump the oatmeal or other grain into the slow cooker, add the water, and flip the switch to either LOW (cook for 6 hours) or HIGH (cook for about 4 hours.) This allows me to cook the oatmeal without having to babysit it on the stove.
