Default Mozzarella Sticks

I'm looking for an Induction friendly recipe for Mozzarella Sticks (aka Cheese Sticks, Fried Cheese). I've heard of people using some egg and pork rinds, but my attempt didn't taste anywhere close.

Also, what kind of dipping sauce could I make? I'm thinking about Ranch Dressing, but any others?

Look in Low Carb Cooking Lessons for the breading thread. Many good suggestions there.

I'd try a base of Atkins baking mix or soy powder with grated parmesan, garlic powder, parsley and crushed pork rinds. Ketatoes is also an excellent addition to a breading mix.

Wet the sticks in a strong egg wash (beat an egg in half a cup of water), roll them in the breading, and repeat if necessary. Lower them gently into hot fat on a strainer or a ladle; lift gently when done.
