| Look in Low Carb Cooking Lessons for the breading thread. Many good suggestions there. I'd try a base of Atkins baking mix or soy powder with grated parmesan, garlic powder, parsley and crushed pork rinds. Ketatoes is also an excellent addition to a breading mix. Wet the sticks in a strong egg wash (beat an egg in half a cup of water), roll them in the breading, and repeat if necessary. Lower them gently into hot fat on a strainer or a ladle; lift gently when done. |
