Promise! I'm sorry that I didn't realize that you wanted this earlier. I've sent it to you in a PM, and I will go ahead and post it here, too, in case someone else wants it.

About the pumpkin - I use Libby's canned pumpkin that is probably located next to the baking items in the grocery store. Make sure to read the label carefully so that you pick up the 100% pure pumpkin and not pumpkin pie filling, which is also made by Libby's and looks a lot like the pie filling, which has sugar in it. Here is the recipe for what I eat:

In a bowl, I mix 1/2 of a can of pumpkin (which is .88 cups) with 2 ounces of cream cheese. I put this in the microwave for 45 seconds then take it out and stir well. I then add a few drops of liquid Splenda, 1 teaspoon of cinnamon, about 1/2 teaspoon of allspice, and about the same amount of nutmeg, and stir. I am past rung 3 in OWL so I also add 1 ounce of almonds, which is about 22 that I cut in half (so I can have 44 nuts ). I then put it back in the microwave for about 50 seconds, stir, and it is done. I find that the warmer it is, the better it tastes (although someone has told me that they like it better cold). And I really, really love this stuff. Beware, though! This concoction contains 15 net carbs. So anyone who doesn't want to use up that many carbs can leave out the nuts and/or cut back on portion sizes of the ingredients. (some people put less cream cheese than I do in it.) It is also has a high fat percentage since I use a lot of cream cheese, but I don't stress over that. This makes a lot, too, so you may not need to make this much. My husband always talked about how good it smells when I make it, so I made it for him one day. He couldn't finish it all because it is kinda rich. Cutting this in half would have been enough for him. I always finish mine.

Yep... that's one of the things that makes it so yummy to me. That's definitely two of the ingredients that can be modified according to taste... some people add nutmeg... some just use pumpkin pie spice (which is a mixture of the 3, I think). I've even added unsweetened cocoa to it before. Some add coconut flour. Play around with it!

Edited to Add: Over the years, I have modified the amount of spice that I use. It has now morphed into about 1 teaspoon of cinnamon, about 1/2 teaspoon of allspice, and about 1/2 teaspoon of nutmeg. I've changed the spice amounts in the original recipe above. Spices are truly an individual thing, and this recipe is very versatile. Just play around until you find the spices that you like.

i really want to make this today... im going to the store in a little while... WHAT SIZE CAN OF PUMPKIN DO I BUY MITZI???
the BIG can or the SMALL half size can???

and here is a Friends recipe that i posted down in the Recipe Forum... Try This if you like Cream Cheese!

Cream Cheese Muffins

2 8oz. pks. philadelphia cream cheese
1/2 cup sweetener (I use spenda)
2 eggs
1/2 tsp. vanilla

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min.

These are Way Better COLD!!!
