| I don't follow any real "set" recipe, but usually I take the yolks (after slicing hard boiled eggs in half) and mix in some mayonnaise, Keens dry mustard powder, a touch of garlic, some chopped chives, a little vinegar (I like it to have a bit of a "bite",) and some parmesan cheese, then put it all in a ziploc bag, clip off a little bit at one end and pipe the mixture back into the shells. Finish by sprinkling a little paprika on them and/or some fresh parsley. Sometimes for a bit of a spicy taste I add some chipotle chili pepper seasoning too. |

| Mash the yolks with mayo, sour cream, a touch of dijon mustard, fresh lemon juice, and a dash of horseradish. Salt and pepper to taste. Good things to add: Chopped fresh dill, minced smoked salmon or other smoked fish such as whitefish or trout, olives, minced shallots, thick sliced smokey bacon crisply cooked. And for a real indulgent treat (like on the holidays or other special days) shave a few slices of truffle and mince it then add to the yolk mixture (you could probably get a close approximation by making your own mayo with truffle oil and adding a bit extra to the yolks mixture)and top with a small dollop (about 1/8 tsp) of a good caviar. Add capers and cornishons as a condiment to serve with the special deviled eggs. Great for later in your diet when you can have these delectible tidbits with a glass of wine. For appetizer size portions, if you have access to quail eggs these are particularly suited to making just the right size appetizers for this. |

| I love to add curry powder to mine. I also love minced onion, but next time I'll avoid the green onions which got way too strong over time, and stick with regular sweet onion....mmmmm maybe I'll go make some now!
