| You can use spaghetti squash if you want to feel like you've eaten pasta, and if you've gotten to that phase of atkins. |

| 2 boneless skinless chicken breasts (cut into squares) 1 pack cooked shrimp 2 8oz pks cream cheese 1/2 cup heavy whipping cream 1tsp garlic 8oz shreaded mozerella cheese 8oz shreaded montery\colby 2tbs parmasian cheese red pepper cajun season (tony's or zatarans) 1 can mustard greens (don't have to add) I like the extra texture it gives. Sprinkle chicken with cajun season lightly. Brown on stove top. When cooked all the way through, add shrimp and garlic. Cook for about 3 min. In seperate microwave save dish, warm cream cheese for about 2 min until soft. Add the mustard greens and stir. Add 1/2 cup whipping cream and mix. Drain the chicken and shrimp mixture (save the juice in seperate container for later) add to cream cheese mixture. Stir. Add half of the shredded mozerella cheese and stir. Put in oven safe dish. Sprinkle parmasian cheese and red pepper on top. Use the rest of the shredded cheese on top. Bake for 25 or 30 minutes until cheese is has golden brown crust. |

| often overlooked, you can thicken a sauce using a liason, a facny term for using an egg yolk to thicken a sauce. an egg yolk in with the cream will add a richness and thickens very nicely! a favorite of mine!
