Default Tortilla Soup

Hey,

I am looking for a low-carb easy to make (I am no expert here) Tortilla Soup recipe. Obviously, I'll be scratching the tortilla chips obviously. I love the tortilla soup at Jim's, I know there are usually onions, chicken, cilantro , and cheese in it. Thanks for the replies!

Garlic and diced tomatoes, the ones with chili peppers are good.

I make tortilla soup sans tortillas and add a squash called chayote. If there are Hispanic sections in your markets, you should be able to find one. Very low carb and works perfect in tortilla soup! You just dice it up and add it, I don't bother peeling.

Well, this is TACO soup, which is kind of the same if you can't eat the tortillas... just sub chicken for hamburger.

He's right, that recipe would work with chicken broth instead of beef, and ditch the cream and the cream cheese. The basic prinicple of soup is you simmer the ingredients, and add seasoning as you go along, try this, try that... you can't hardly go wrong. You might get a little different result each time, but it's all good.
