| I am not a fan, so I don't have any recipes, but I think you can use them in parmesan recipes, slice, dip in egg, coat in the parm and fry. |

| There's a nice recipe by josie for eggplant, where you dip the eggplant slices in beaten egg white and fry it. you'll have to do a search for it.

| To find the carb count, you can use FitDay or a similar online tool. It lists nutritional information the American way, so you'll have to subtract the fiber.
