| I use it in mexican soup, like you would use a zucchini perhaps? In fact that is what I am eating now. for the 'fake apples' just saute in butter and add a little cinnamon and sweetener. You don't have to peel it for recipes, just cut it up and toss the little bit of seed in the middle.

| 3 chayote squash 2 TB vegetable oil 1 onion, finely chopped 3/4 lb.chorizo 2 cloves garlic, minced 1 jalapeno , seeded and minced 3 tomatoes, peeled, seeded and chopped 1/4 tsp dried oregano 1/4 tsp cumin 1/2 cup grated parmesan cheese Directions Cut the chayote in half lengthwise and remove the seed. Cook the squash in lightly salted water to cover until tender-crisp, about 25 minutes. Drain and scoop out most of the flesh, leaving a 1/4 inch shell. Set shells aside and chop flesh. Preheat oven to 350 degrees. Heat the oil in a skillet and saute the onion until it is soft. Add the chorizo, garlic and jalapenos, and cook over medium heat until the meat is cooked. Add the tomatoes, oregano, cumin, and reserved chayote flesh. Combine well. Pile the mixture into the reserved chayote shells. Sprinkle with cheese. Set in baking dish and bake 15 to 20 minutes. |

| I don't know why I came up with the choyote but I guess it was the fried "apple" recipe I had seen somewhere. Lynne that recipe looks delicious!! I kept it and will try it also -- how would Italian sausage taste in place of the chorizo? I bought Italian sausage this afternoon.... Thank you everyone for helping!! I'm really looking forward to the veggie challenge

too funny!!!!! I opted for the chayote "fried apples" off Linda's site. They were delicious. I had only bought 1 so I shared it with mom but would have loved to have had it all to myself! I'll have that over and over again. Good way to get something new in and something with a few more carbs in! Thank you to everyone -- I'm going to try the baked chorizo and chayote -- I bought some chorizo because I was afraid the Italian Sausage just wasn't going to work....you know, the chorizo might mind too much!! LOL

| It's also called a "mirliton" in Louisiana, and "christophene" in the Caribbean. I remember watching a Cajun cooking show a long time ago where the chef stuffed the mirliton/chayote with crab or chicken and baked them.

| Oh my goodness! I saw the chayote recipe for the fried apples ages ago but couldnt get the squash in NJ stores. After reading this thread today, I googled it and they sell it all over here in China! I am going to go get some this week! Unfortunately, I leave for NJ on Friday! LOL |

| When I lived in New Jersey (over 10 years ago), I used to see chayote at SHopRite all the time.....I loved ShopRite.... They used to have fiddlehead ferns in the spring. And they used to sell squid--already cleaned.
