Default eggplant / aubergine

I don't know how to cook it - my husband grills it on the bbq - but I am looking for other options - any ideas?

I cook mine with a little olive oil, like a stir fry. It takes a long time to get tender, though. I should also add that I am a terrible cook.

1st goal: 139 (earlier weight)
what the rungs mean to me:
rung 1 - more veggies
rung 2 - dairy (some milk in coffee)
rung 3 - seeds, nuts
rung 4 - berries, melon
rung 5 - wine - gotta really re-think this rung
rung 6 - beans, hummus (stay until 133)
rung 7 - other fruits (stay until 131)
rung 8 - carrots/ potatoes (nah, prolly not)
rung 9 - whole grains (oatmeal)
Major Goal - 128 lbs/ healthy range (on to pre-maintenance)

I cube the eggplant, along with onion, green beans, zucchini, etc. Toss them with olive oil, salt and pepper, put it into a shallow baking dish and bake at 400 degrees F for about 30 minutes. Stirring the mixture every 5 to 10 minutes, so that they brown on all sides. Then I take it out of the oven. While it's hot, I stir in a mixture of chopped herbs (parsley, thyme, etc.), minced raw garlic, and olive oil. I serve it warm or cold, with a squirt of lemon juice. Or I slice the eggplant into "fries" and deep fry them.

There is an Afghani eggplant dish that I'm still trying to find the recipe for. It's eggplant, layered with sweet peppers and tomatoes and baked until the eggplant is tender. The sauce has spices in it that I can't quite figure out: I'm pretty sure that cumin is one of the spices. I get it at a local kabob house here. Anyhow, I'm still looking for the recipe.

Also there is a recipe in the Side Dish forum or in the Main dish forum for eggplant by vjosie. It's eggplant slices dipped in beaten egg whites and fried. It's really, really, really good.
