| I love Old Bay Seasoning -- it's great on any kind of seafood. Sprinkle it on any fish and saute in a pan with olive oil or butter. Add a little lemon juice and you've got a great meal! |

| If it dies out when you steam it, you might be overcooking the fish. Anyhow, I make "packets" take either aluminum foil or cooking parchment paper. Put the fish on a piece of it. Add the seasonings---salt, pepper, herbs, spices---add veggies if you want. Seal the packet. If using aluminum foil, fold the edges shut. If using parchment paper, need to wrap it like you are wrapping gift, making sure the edges are completely closed. Either bake the packet, or in the case of the parchment paper one, microwave it .

| Staples work well with the parchment paper... just don't put them in the microwave! I might try this over the weekend, but, when ever we go camping we make omlets in a Ziploc bag, then boil it until the egg is cooked. I wonder how it would be if you put fish, veggies etc. in the bag and boiled it? |

| I love fish. Lately I've been making flounder & cod fish. I sprinkle them with Cajun Seasoning, and pan fry them in butter. I have a really good recipe for red snapper, but it's expensive to make. I guess you could use any fish really. Here's the recipe. Obviously, skip the tortilla chips. Red Snapper Hash and more delicious recipes, smart cooking tips, and video demonstrations on marthastewart.com When I have really good fresh fish (usually red snapper), I make ceviche, especially in the summertime.
