Default Substitute for Roast Potatoes

Just about to site down for traditional British Sunday Roast, and whilst I have now perfected carb free gravy using Xanantham Gum, the next thing I miss the most is roast potatoes, not that I am craving carbs, just for the taste!

Has anyone come up with any form of substitute (I guess using cauliflower or simlar) so that you get that crispy roasted in fat skin and soft inside?

Seriously, you have to try this recipe. Well, I can't find the recipe right now, but I'll keep looking for it for you. You cut up radishes and fry them in EVOO. I add a small amount of chopped green onions near the end of cooking time and sometimes some garlic. THEY ARE AWESOME!!

Linda's Low Carb Menus & Recipes

There you go! Enjoy them! I find the green onion drowns out the taste of the radishes but if I add them too soon they blacken and burn in the pan. Garlic helps too and these really don't taste like radishes.

Oh, and I did not use the slow cooker method. You can certainly fry them in a frying pan with extra virgin olive oil. Also, don't forget to use the lid to your pan. That helps get them tender and cooks them faster.

Celery root, also known as celeriac, is a terrific potato substitute. IT is induction friendly. It can be prepared like potatoes: fried, mashed, boiled in stews, etc.

In the US, it's not a very popular vegetable, so it's availability is strictly seasonal. But try to find it where you are.

I roast turnip chunks - not quite the same as roast spuds I know, but we have grown to love 'em with a traditional Sunday lunch!
