__________________ 149/148.6/ 119 re-start day - June 23, 2009 3/13 1st goal: 139 (earlier weight) what the rungs mean to me: rung 1 - more veggies rung 2 - dairy (some milk in coffee) rung 3 - seeds, nuts rung 4 - berries, melon rung 5 - wine - gotta really re-think this rung rung 6 - beans, hummus (stay until 133) rung 7 - other fruits (stay until 131) rung 8 - carrots/ potatoes (nah, prolly not) rung 9 - whole grains (oatmeal) Major Goal - 128 lbs/ healthy range (on to pre-maintenance) http://www.atkinsdietbulletinboard.c...ramblings.html |

| You can used canned chickpeas, just drain and rinse them or you can actually soak dried chickpeas and cook them. I use canned because it's easier. Anyhow put 2 cans of drained and rinsed chickpeas into a food processor, add 2 tablespoons sesame paste (AKA tahini), 1-2 cloves of chopped garlic, and 1/3-1/2 cup of good olive oil. Process until smooth. Add salt to taste. I also make "hummus" out of other beans like canned lima beans, red beans, pinto beans, etc.

| Also, use lemon juice. Start with the juice of half a lemon and add more depending on your taste.

| Thanks for the recipe, Megs. I'll be starting Rung 6 (skipping 5) in September and I've been looking for ways to use those few tbsp of beans that fit in 5 net carbs. Question (might sound crazy). Would a blender work, instead of a food processor?

| I was doing South Beach before this week where you had to have beans every day. Where it's just me eating this stuff, I became a master of small portions cookery. I would freeze 1/2 cup portions of various beans and make different kinds of bean spreads in small portions. I think this will work well in Atkins too as I don't think we can have massive portions of beans in that rung and the stuff doesn't keep in the fridge forever. A blender would work except you need to do the beans in small batches. I used a small mini blender called Magic Bullet to make my hummus/bean spreads. There are other brands of small blenders out there too. A large blender would work fine...it's just harder to scoop out a small portion. If you're making a large batch in the blender, mash up the beans first. You may have to periodically stop the blender and manually mix up the ingredients a bit, but it will work. p.s. I miss beans/legumes! Can't wait until I get to the bean rung. That's not for a while though.

| I also add some beans to salads once in a while. But yes the portions have to be small. I like hummus a lot too. I just throw some stuff together and hope it works

| It's amazing with some roasted red pepper thrown in too! And a bit of cayenne pepper if you like it hot. Don't skimp on the lemon juice!
