| You could make a salad from it. The way I do it is with mayo. Use a fork to make some holes in the eggplant or it might explode in the oven. Then roast the eggplant, peel it, leave to drain. Chop well (otherwise you'll get thick snot-like thingies in the salad, which are gross, imo). Mix this with mayo. Then add chopped onion, minced garlic, salt, pepper, etc. You can use this on crackers, revolution rolls, on endive leaves... Or you can mix pieces of cooked eggplant with tomatoes, onion, feta cheese, capers, fresh basil, oregano, salt and pepper, vinegar and olive oil to make a salad. | PP, that is how my grandmother used to make her eggplant and me too!!! I just bought an eggplant today, but I thought about crushing up a bunch of pork rinds and substituting it for the flour. I will let you know how it goes. M |
