You can also pound the scallopini until it is thin, then make a filling out of mushrooms or cheese, etc. Spread the filling on the pounded scallopini and roll it up like a jelly roll. Wrap the rolls in aluminum or plastic wrap and refrigerate at least 1 hour (this will help the rolls stick together while cooking.) Then you can brown the rolls in a skillet before baking them in the oven until they are done.

| yummy! sound delicious....BUT...I am doing Induction very strictly and I cannot have onion, so I'll try your mushroom and cheese idea! what a good pairing for a cheese? |

| Onions are listed on the Induction Acceptable Foods list. So whoever told you that you cannot have onions has never read the list carefully.
