| I love Reubens too! I'm not sure if this would qualify as a "casserole", but what I do is take a can of corned beef (or leftover shredded corned beef), mix it with softened cream cheese, a tablespoon or two of low carb ketchup and a couple tablespoons of mayo (this mimics the Russian dressing) and a tablespoon of caraway seeds (this mimics the caraway flavor of the rye bread.) Then I put it into a crockpot and cook until it's heated through (microwaving it works too.) And I serve it on a bed of sauerkraut.

| Oh, I forgot ----you have to throw in some Swiss cheese, either into the corned beef mix so it melts in or you can have the Swiss on the side. If you don't have low carb ketchup, you can sub tomato paste.

| Thank you very much for the recipe... I may just substitute the ketchup with mustard.. cause I am a mustard girl with corned beef....My mouth is watering... sounds delicous!!! |

| I didn't even think about crockpot. I think I would put it in a baking dish. Russian dressing base, layer of kraut, layer of corned beef and then half way through add swiss cheese to the top. Once it's brown and bubbly drizzle either more dressing OR mustard ( I like mustard too) on top and the sprinkle of seeds is a great idea. |

| That was just off the top of my head, but, I may have to try it too. I'm actually wondering how it might be with a little egg mixed in to kind of bind the beef and kraut together... or maybe use shredded swiss cheese and mix it all and then add more towards the end... hmmm |

| Gosh Chad..I love corned beef hash.. and when I hear eggs and corned beef thats what I think about...too bad there isnt really a good sub for potatoes.. well for my tastes anyway.... |

| Check out fried radishes from one of the other threads. I tried them this past weekend and while they are not the perfect potatoe sub, they came close and were quite good. As for the eggs, I meant as a binder ( think lasagna or meatloaf) |
