| Here are some sauce recipes. Creme fraiche plain or with a little herbs or spices makes a tasty quickie sauce as it melts over your hot chicken (or fish or beef or eggs).

| Coat a chicken breast with some Parmesean cheese (I use fresh grated, not the powder in the can) and then coat the chicken breast with some Ranch Dressing and bake until the juices run clear and it is done. It is yummy and gives you some needed fat.

| Two quickies-- fresh salsa, sour cream and cheddar and pesto and a wee bit of mayo for a quick sauce-this one is good on cold chicken and broiled salmon as well |

| I poach mine in white wine (use watered down wine vinegar in induction) and EVOO. I put in a few fresh sage leaves (very important ingredient. If you can't find fresh use dried). When the liquid is nearly evaporated and the chicken breasts cooked through, add some cream and heat to warm. Salt and pepper to taste. Yummm!
