Input and thoughts would be much appreciated! Thanks!

Lunch: Three steak tacos (JUST the meat)
Dinner: Chicken salad (mayo, 1 slice of tomato, 1 slice of onion) on 2 cups of mixed baby greens, water
Snack: Pork Rinds, 1 Peanut Butter Advantage bar (I will NOT be doing this again after reading some of the comments), more water

*I drank my recommended water for the day! Yay me!

Day two: (so far)

Default Re: My Induction Menu - Two days worth.

Hiya Jinx, Overall it looks like you are doing great, here are a few comments though:

It's a little hard to judge the amount of vegetables your eating. According to the guidelines you should be eating 3 cups of salad vegetables per day or 2 cups salad vegetables and one cup "other" veggies. Also, that first day it looks like you have all your vegetables at one meal. It's really better to try to spread that out as even veggies taken all at once can cause a blood sugar spike.

Be sure to check for hidden carbs. The seasoning on your steak taco may have sugar, same with your mayo. Even if the carb count says 0 remember that the count could actually be .5 or below, so always look at the ingredients and search for sugar (or anything ending in -ose like sucrose or dextrose), corn syrup solids
etc. and be sure to count those carbs.

On the pork rinds, just be aware that they often have a LOT of sodium (the kind I have here have 3 times more then salted sunflower seeds). That can cause you to retain water so keep that in mind.

Thats all I can think of, as I said it looks great overall. Especially happy to see you are keeping up with your water as that is soo important.

Thanks for responding. I use Hellmann's mayo. Is that ok?

The steak taco's were seasoned simply, no sugar. A mexican seasoning called Adobo which is onion powder, garlic powder, black pepper, ground cumin, powdered Mexican oregano.

The veggies are a problem. I am so tired of eating salads it is driving me crazy. Any ideas on other veggies I could have?

many members use the fullfat Hellmans - I use an 'own brand' supermarket mayo as it has less than half the carbs of Hellmans, so check labels to get the one with the least sugar in it.

a good choice

Take a look at the list of 'salad veggies' again - it is much more than lettuce or leafy stuff! I eat lots of mushrooms, celery, red and green peppers and very little lettuce.

You dont have to eat the 'salad veg' raw - or the 'other veggies' cooked either. Experiment with different ways of preparing them to see which you like. I often sauté sliced peppers in butter to make a topping for meats.
