| Looks like legal choices of food, though you would be going over your 3 cups of veg by one tomato if you also have the 3 cups from the 'salad veg' list. I would guess that one medium tomato might be about 1/2 a cup, so you would need to drop 1/2 a cup of lettuce to be exactly correct. Better to drop the lettuce which has little goodness in it than any of the others btw.
