Default Stuck - could use some feedback

Would love some feedback on my menu as the scale seems to be going the wrong direction and no change in inches:

Day 1:
Breakfast: 2 eggs, 1 small plum tomato, 2 Tbsp cheddar cheese (scrambled together), 1 cup coffee with 1 tsp splenda and 1/2 Tbsp heavy cream

Lunch: Usually left overs from dinner. Today I'm having leftover tuna salad (tuna, mayo, chopped pickle, mustard, paprika, salt, pepper) over 1/2 cup green beans, 1 cup romaine with about 1 Tbsp chopped tomatoes, 1 Tbsp ranch

Snack: 1 oz mozzarella cheese, 1 cup sliced cucumbers

Dinner: pork shoulder roast, asparagus, small romaine salad with ranch


Day 2:
Breakfast: 2 eggs, 1 small plum tomato, 2 Tbsp cheddar cheese (scrambled together), 1 cup coffee with 1 tsp splenda and 1/2 Tbsp heavy cream

Lunch: taco salad (lettuce, toms, 2 tbsp cheddar cheese, avocado, ground beef, sour cream, 1 Tbsp salsa)

Snack: 15 black olives, 1 cup cucumber

Dinner: 2 hamburger patty, lettuce (for burger wrap), 2 slices tomato, 2 tsp mustard, 1 pickle

I see you're in OWL Rung 1. So did you increase your carbs or add a new food? What food? What is your current carb level?

How long has the scale been stuck?

Are you exercising?

Edited to add: Your menus look good. I'm not sure if you are eating enough fat, but I guess you already checked that in FitDay.

I've mainly just tried to increase my veggies. I'm usually getting about 22 or so net carbs with 15 in veggies. I guess I have a hard time with this part. The scale has bounced around from 168 to 170 forever. I have been trying to do this WOE for months. I did a 're-start' towards the end of June.

My exercise is I do a cardio water aerobics class 3x per week and laps on Tuesdays and Thursdays when I can fit it in.

I use Sparkpeople to track my foods and I usually end up close to that 60/35/5 number, sometimes more like 60/30/10.

Thanks for the feedback! I'll keep trudging along!

Special Category Foods
To add variety, each day you can also eat 10 to 20 olives, half a small avocado, an ounce of sour cream or three ounces of unsweetened heavy cream, as well as two to three tablespoons of lemon juice or lime juice. But be aware that these foods occasionally slow down weight loss in some people, and may need to be avoided in the first two weeks. If you seem to be losing slowly, moderate your intake of these foods.
