There are pros and cons to doing the conversions. Yes, it's easy to chuck everything into a cup, but we still need the weight equivalents to shop and for almost all general cooking, as recipes are in metric. Some of us (ahem) also like the precision of being able to weigh food.
Plus, beans come in handy 200g packs, so once you know one cup of beans = 100g, that's perfect for two people. Also, 75g mushrooms = 1 cup, so I just weigh out 150g bags of mushrooms right in the store.
Most people doing Atkins in metric will have a food scale in their kitchen. (This is how my husband knew we were serious about Atkins - I threw out the toaster and replaced it with a metric food scale!)
It took me about a week to become efficient with this, but overall I'd say it's easier to work with the cups converted to grams if you're living in a metric society.
