Day 2 of Induction


Breakfast
-Bacon
-Eggs

Mid-morning Snack
-cheeseburger quiche

Lunch
-pork chop
-salad
-balsamic dressing

Afternoon Snack
-tuna muffin
-block of cheese

Snack (due to being away from home and starving)
-bacon (yes, I had it on hand...I must be strange)

Dinner
-2 Wendy's Jr. Bacon Cheeseburgers (sans the bun)
-Wendy's side salad (sans the carrots)
-balsamic dressing

76 oz. of water down!

Question: Are pork rinds ok on induction? I need something to keep on hand in case I'm caught out late again (in an unplanned situation).

Ooh, watch the balsamic dressing, it's not induction friendly due to high sugar content. Other than that, you are doing marvelously!

You can have pork rinds, in fact lots of people use them instead of breading. But again, go easy on them because of the sodium in them. It could cause you to retain water, therefore a gain in weight. Just drink more water after you've eaten them. They are good in a pinch!

Oh my gosh! The Balsamic Dressing is bad? I searched high and low for something low carb. This is Olive Oil Balsamic Dressing. It has 1 carb and less than 1 gram of sugar. Ingredients: water, soybean oil, balsamic vinegar, cider vinegar, spices, extra virgin olive oil; contains 2% or less of salt, garlic, onion, sun dried tomatoes, green and red sweet peppers, natural flavor, citric acid, xanthan gum, paprika oleoresin (color).

I thought this would be a better choice than the ranch since it had less carbs and less sugar. This saddens me.

Sunny and silly! Thanks for your comments. I'm still in shock over the balsamic dressing.

The tuna muffins are delish! Love them!! They taste like the salmon patties my grandmother used to make before she passed away. I found the recipe at www.genaw.com/lowcarb. I omitted some items (food allergies). I only used tuna, eggs, shredded cheddar cheese, and a pinch of Old Bay seasoning and then baked them in muffin pans. They turned out so cute!! I almost didn't want to eat them (but glad I did). They are so yummy!!

Yes - balsamic vinegar is the one vinegar that Dr Atkins specifically mentioned as not being induction-legal.

Thanks so much for all of your support (especially warning me about the balsamic dressing!). I went out today and bought some Kraft Ranch Dressing (actually I love ranch so this is good). I'm only keeping it to 1 tbsp (mixed with a little water) per salad (I don't care how big the salad is).

Sunny, I think you're going to love those salmon muffins. I only pack one to work (keeps me from eating them all in one sitting).

So far so good today. I've had bacon, eggs, tuna muffin, block of cheese, salad, ranch dressing, and baked chicken and I'm not starving like I usually am - eating one thing after another because I couldn't get full. Atkins so rocks (as do all of you)!!

I made the salmon muffins this morning and I am drooling to try them, but can't. They look soooo good. I'm having a tricky procedure done at UVA hospital, today, and can't eat any meat or fat until it is over (it has nothing to do with my digestive system, and this is the first time I can't eat meat or fat). I will have one as soon as I get home.

I used pepper jack cheese and some parmesan and added fresh chives and parsley. They look lovely.

If there's no sugar in the dressing, there's no reason to limit it. You want that fat, it's the fat that's going to make you lose weight! In fact, in the beginning the more fat, the better. Go ahead and splurge legally on the dressing!
