I looked into fitday, but the geek in me loves Excel. Don't ask me why. I think it's because I can manipulate the charts and stuff like that.

Today I was very good. Well, kinda good. Tomorrow I will be very good. Over the weekend, I was pms-ing to the point of making my poor hubby almost insane. I asked him to pleeeeease go get me something chocolate. He told me that he'd surprise me. He came back with - I swear to you - a pepperidge farm three layer chocolate cake, dove ice cream bars, triple chocolate ice cream cones, dove mini bites, Jello chocolate pudding packs AND jello dark chocolate pudding packs. He said, "Baby...I love you - I hope this makes you feel better" Haha. He does love me. And I gorged and I felt better and I don't feel guilty and now I'm over it. Today I went to the grocery store and stocked up on the real good stuff, I got lunches together for the rest of the week and I'm all set again. Some days, I just have to have some chocolate - for my own sanity as well as the sanity of my loved ones. ~laughing~

This is such a great post! I'm one of the lucky people that the ketostix works for(I think I read somewhere in the book that they don't always work for everyone even though they are in ketosis?). I know you guys are talking about chartering your weight-loss, but I just had this bright idea to ditch my scales and go by the ketostix only. If any of you remember me then you know that I was going through a major stall right before I left the board due to family issues. The scale depresses me when I don't see the number that I was hoping for, especially when the numbers go up and stay that way for months. I'm still at the same weight that I was when I left. I had gained some after leaving, but then I did a long water fast and did a short amount of time on the master cleanse due to health reasons(I really don't recommend this for weightloss as it was very hard on my body and I had no energy to play with my kids, plus I gained almost all of the weight back). Now Atkins is working for me again and I'm finally losing on it. I've also decided not to count what day that I'm on because I'm trying to condition a mindset that this is for life and I'm not going to count what day I'm on for the rest of my life. Anyways, I really enjoyed this post! Thanks for sharing!!!

Gotta love those doctors who agree with Atkins. Funny thing is, I've found this to be true in only male doctors, nurses, anesthesiologists, etc. Haven't found a female medical professional who does. Any I've mentioned Atkins to all still have the phobia about fat.
My nurse at my GP's office is right behind Atkins all the way. She has never been the least bit over weight, but she still does low carb. She is the wife of my GP, and she keeps him on low carb as well! Says unless he wants to cook, he has no choice.

Sure! The original recipe is in DANDR, this is how I do it.

I sort of do it from memory now, so this is what I use... I make these about once a week and this is how I do it.

8oz unsweetened baking chocolate
1/2 stick butter
1 cup heavy cream
~1 cup sweetener (I use Sweetzfree)
Vanilla or other flavors to taste

Break the chocolate up into a microwave safe dish. Zap it on high for 1m 30sec. While it's microwaving chop up the butter into smaller pieces. When it's done mix in the butter, sweetener (30 drops Sweetzfree if you use that... makes it slightly bitter which is how I like it!), and any other ingredients. I typically use about 1Tbls vanilla, but I've also experimented with things like rum and kaluha if you want to use it. Just enough to flavor. Doesn't have to be totally smooth, the hot cream will help melt any chunks. Do not mix this mxture too much or it will start to get very solid as it cools.

Now take the heavy cream and bring it to a rolling boil. Immediately take it off the heat and dump it into the bowl of other stuff. Mix it all up and stick it in the fridge for 2 hours (possibly more or less depending on how cold your fridge is). You want it to be firm enough to scoop and mold, but not solid. Now, I have a cookie dough scoop which looks like a slightly larger mellon baller, but you can use whatever. Scoop them out onto a cookie tray with wax paper and stick back in the fridge until they firm up completely (another hour or two). Enjoy!

I typically get 20 or so truffles per batch. They are induction-legal, just watch how many you eat. They make a VERY nice treat If you are out off induction some alternatives include the various alcholol flavors, adding nuts to the mixture (makes it very firm, so watch out), rolling the balls in powdered cocoa, etc; You can also go one step further and freeze them. Then you create a really thin chocolate sauce, pull out the frozen truffles, and dip them in for a "shell". Back in the fridge until solid.

I work in a public health clinic and have tried talking to our registered dietician about low carbing. Her response was "it isn't healthy and ketosis is bad for you." I asked her if she has read any of the books, medical studies, etc. "No, I was taught it was wrong."

~~sigh

I just don't talk about it with her any more. If she asks I just say I am eating healthier.

Low fat doesn't work...or only works up to a certain point. With WW I lost weight; but at the maintenance level my points were so low I felt as though I was starving every evening.

I just feel healthier, even only being back on board for 3 weeks now, with keeping simple carbs out of my diet.

Being a nurse, I have found that other healthcare professionals either love low carb or hate, hate, hate it (mainly out of ignorance).

Keep up the great work and good luck getting that heating/cooling system fixed.
