Talking Im a 2nd timer too!!!

Hello All,
I am new to the club here however I am no newbie when it comes to Atkins. On the 14 of October 2002- I started Atkins WOL after I went to a friends house and tried to use her scale that only went to 270 and I topped off the scale and it stayed stuck like that even after I got off-I did manage to get it back to 0-... I know its not funny but go ahead and laugh- I did later.. the bad thing is I topped off the scale because I weighed 307 pounds, I had to use an industrial scale at work to weigh myself-went to work early so no one would see...
so then I tried several diets and none of them worked then I saw a magazine- not sure which one-enquirer or something that had an article that said eat all you want and still lose weight-lose 14 pds in two weeks... so I bought the book...why because it said eat all you want!!!!
So I did and it was about Atkins- I did find out that the term eat all you want was a little overstated. SO I researched and researched and then one day I did the HOW MANY CARBS are you eating test...I was consuming well over 400 carbs a day-no wonder i weighed 300+ pds... I am the person that threw a fit when my son bought me a diet Dr. Pepper and couldnt eat one time because there was no bread... I am the person who lived on rice and pasta because there was no way I could eat a meal without it... but here I was the moment of truth when I decided I was gonna try.. I said to myself- I give it one week.. I knew what lay ahead of me-fatigue-headaches and major withdrawl but I was already experiencing it all so what did I have to lose..so then I got thru the 1st week- so tired I couldnt even get out of bed. but then I had to remind myself 300 pds.GOLLY!! S
o then I mustered the energy to get to work early to weigh myself- got on the scale and low and behold... I had lost 11 pounds in one week...OMG!
1 week and 5 days into Atkins and the lights came on-I woke up one morning and my fatigue and headaches were gone- I had gotten thru withdrawl...that was the start of it- from that day forward I wouldnt even look at sweets and then that WOL stayed with me for 4 years... I lost 110 pounds in about 8 months and so far in 08 I have kept 90% of it off all this time- i even got a tummy tuck 2 years ago to get rid of some stuff... so here i am -I weigh right at 198 or 200 or 204-i have seen it fluctuate... I wear a size 16 so to me for a long time was good considering I was a size 24/ 26... I did manage to keep some of my WOL habits I think that is why I never really gained any weight back but there was a time I did get to 220 and up until 3 days ago was eating carbs left and right...
ANd now I am on induction again to lose the last 50 pounds of my goal that i set 6 years ago... and I am finding myself loving this again like I did so long ago... I am an atkins success story and am proof that this diet does work but only partly because my goal was never really accomplished- if i lose the last 50 i will have a total weight loss of 160 pounds, this goal has been in the back if my mind so here i am.. this time I am gonna finish so wish me luck==

Welcome, cant wait til you share pictures with us, but I realize we are going to have to get toknow each other first. I am Jess, and i've been here a while now. I love to meet success stories, it soooo helps me keep my focus on success and sustaining....I was to be a sustainer!!!!

Thanks for your Welcome Jess, and I will get pics as soon as possible so everyone can see. I joined so I can get support and me knowing people know that I am doing it helps me to be to stay focused. the girls in my office are struglling to do it, so I started so that they can see it can be done and I cant wait to get results.

well, you know all about results and how long they take and how consistent and persistent and all that you've got to BE!!!! work and wait, and as you know, some results come quickly like the energy and clear headed feeling and other results take a bit of time!!! It all comes to those who work and wait!

You are a ringing endorsement for the health benefits as well as weight loss, you sound quite chipper and spry! I hear you about the carbs....I was getting to be a total donut fiend again when I decided it is time to do this again and seriously! Glad to have you join us on the journey.

Thank You, Thank You for your welcome, I am so glad to be here. Apple Fritters were my thing...I wished I had this the first time around. This is so nice to communicate with fellow STACers and know Im not alone... its time to go forward... you oughta try my Mock danish in the morn it is scrumpteous and its good whenever you need a sweet treat...I sub with WHIPPED cream cheese in the morn instead of the regular since its got 1 less carb and I double the recipe because 1 egg is not enough for me..that has been a great substitute with my coffee- i also get low carb peanut butter (I find the one that has the least carbs) and feast on that everytime I need a sweet bite- I limit myself to 2 tsp a day-2.5 carbs..because I do have a sweet tooth...... and the pancakes arent bad either, the danish is easier to make at work inthe micro...try it you will love it...


Mock Danish

Ingredients:
2 oz. cream cheese
1 large egg
1 packet Splenda
1 tsp vanilla flavoring

Soften the cream cheese in the microwave for 20-30 seconds. Add the egg, Splenda, and vanilla and beat well until completely blended. Nuke for an additional 45 seconds - 1 minute depending on your micro. You want it to look like custard not scrambled eggs. Stir and Add a dash of cinnamon and a pat of butter on top...You can eat it without the cinnamon but that is what makes it taste like a Danish.


Don't forget to count the 2-oz cream cheese in your daily cheese total.

I haven't tried this but it sounds OK. Portion control might be a problem with this large a batch.

Cream Cheese Pancakes

4 eggs, separated
8 oz cream cheese, softened at room temperature
2 tbsp Sugar Twin (or equivalent Splenda whatever that would be)
1/4 tsp vanilla
1/4 tsp cinnamon butter for frying

Using a whisk, mix the egg yolks and the cream cheese together until smooth. Add Sugar Twin, vanilla, and cinnamon, stirring to mix thoroughly. Use electric beaters to beat the egg whites until very frothy. Gently fold the egg whites into the cream cheese mixture. Using a 1/4-cup measuring cup, drop the batter onto a buttered skillet over medium to medium-low heat. Let each pancake sit until it starts to bubble a bit (at least a minute or a minute-and-a-half), then flip and cook other side until golden brown (for 30 seconds to a minute). Makes about 14-16 pancakes, less than 1 carb per pancake. No need for syrup, but if you want that maple flavor with your pancakes, just mix a few drops of maple flavoring into softened butter with a little Sugar Twin (be aware that this may add another carb or so) and you're good to go!

I laughed at your post, shooked my head in agreement, and proud of your success all at the same time. Look forward to getting to know you. I am 4 weeks into my, jee can't even count anymore, 4th 5th 6th who knows restart.

Yea it ws pretty funny- I will have to admit- I have that funny bone in me and try to humor up my low points that have lead to my success.. today is my 4th day and I am feeling really crappy again but its the best crappy to feel, knowing its working.. I have a headache but I am gonna enjoy it and not take anything til I drive home... i know self torture.. thats how i gotta do it... well thanks for your email and i look forward to posting and hearing the success's of many,yourself and mine...ciao'
