Default I just ate Eggplant Parmigana....
totally legally. I used spaghetti squash for the "noodles," then roasted some eggplant slices in the oven lightly brushed with olive oil. Then I baked it all together with some organic tomato sauce (no sugar added) and mozerella cheese --- yummy!
