| There are loads of so called "salad" veggies that you can use in ways other than salad....like mushrooms in an omelet. Or peppers in some paprikash chicken..... |

| BTW, I have no idea why cauliflower or spinach are in the "other veggie" department. If I was gonna condone "cheating" *wink, wink* I wouldn't consider those two higher carb veggies....... |

| radishes can be saute'd and are terrific. When I don't want a cold salad, I put hot seasoned-by-me taco meat on it, and it is a whole 'nother animal. I can eat red and green peppers saute'd with just a little onion!

| I know I'm a dork, but I had no idea that radishes can be sautéed. They give us radishes all the time at the canteen, so I think I'll use them as filling for an omelet. Thanks for the tip!

| You could also use cucumber as your salad veges.

| Hello Mothette, Looks as though you've had wonderful advice from everyone! Fortunately the salad veggie list on page 125 consist of more than just lettuce, ha Portebello mushrooms (4oz) have 4.1 net carbs. A great way to get your veggie carbs in and they are wonderful on the grill brushed with olive oil. Radishes are so good in vegetable soups and I put mine in with a roast. Like mini potatoes, So Yummy! Jicama is a tastey treat aswell, so full of vitamins and fiber. Cucumbers are a wonderful way to get your veggies in throughout the day. I keep a container of them slices up in the fridge for a quick grab and snack. Getting your veggies spread out throughout the day is always a great idea. So saute some of those peppers and mushrooms up in your omelet or scrambled eggs. YUMMO! Or even make a fritatta with veggies, eggs and cheese. Or even a quiche would be lovely. That way you can have enough for breakfast for the week. Quiche freezes well too. | bok choy is wonderful saute'd too. I cook quarted radishes in bacon grease with a little onion, delicious! And good ole' celery, with ranch dip or cream cheese... it is still cold but not leafy!

| I didn't read the responses, so sorry if I repeat anybody... BUT! I've done Atkins for a year straight (twice, for a total of 2 years) and I don't eat salad, period. You don't have to eat salad on Atkins. You don't have to eat 2 to 3 cups of SALAD a day... just SALAD VEGETABLES. Eat 2-3 cups of the following: cucumber (i slice mine up, add salt and pepper and sour cream) mushrooms (sauteed in a dash of olive oil and salt and pepper... YES PLEASE) peppers (stuff em... 'nuff said) celery (I can only stomach celery if I boil it til limp, and then simmer for hours with other vegetables in chicken broth and make it soup) But, yeah, there are ways around lettuce... To me, it's like eating sheets of grass... I've never understood how people can eat it... Other salad veggies Dr. Atkins list are: alfafa sprouts, arugula, bok choy, chicory, chives, daikon, endive, escarole, fennel, jicama (which is AWESOME if you know how to cook it), mache, parsley, radicchio, radishes, romaine and sorrel. I hope this helps and I hope you try something new!!
