| Its probably not how you're "supposed" to make them, I think next time i'd let them soak overnight in water to soften but I was hungry and I dont mind the texture. I just grated a bunch of jicama, a little less than half a whole jicama, into a bowl and let it sit in salt and pepper while I heated up a skillet with olive oil and butter. then just tossed em in and cooked them till they were all browned and pretty. Jicama seems to get a lot sweeter when you cook it down as opposed to just eating it raw, so what came out was a very unusual flavor. Something between hash browns and caramelized onions. I used a bit too much oil I think and mine came out a touch too greasy for my taste but it still tasted awesome. I'm gonna attempt to make Linda's radish foux roasted potatoes tonight, I think they may turn out less sweet and maybe more like potatoes if I add some bacon to it |
