  • Induction on a Budget

    I recently lost my job and money is super-tight for me.

    Does anyone have any tips or ideas that will help me with this WOE on a budget? I try to buy things when they're on sale like cheese and vegetables, and I buy meat in bulk on sale and freeze it. Eggs were on sale at the supermarket 2 doz./$1. I wish I could freeze eggs and use them as I need them!! (I know eggs are one of the top things for Atkins on a budget, but this WOE cannot be done on eggs alone. Besides, that would be sort of gross.)

    Right now, I'm BARELY eating enough of what I need to eat. Water, on the other hand, is no problem. Whenever I'm hungry and have nothing to eat, I drink water...or have a cigarette. (If I was a supermodel, it would be the perfect diet, right? lol) I know smoking is bad, mmmkay?

    Any tips on how to stretch foods, or great budget food ideas would be great.

    A long time ago, I went from 317 to 234.
    Today, I'm starting over again...

        I hope you find a job soon. Also cigarettes are expensive, for $5 a pack you could buy plenty of eggs, then with the next $5 you could buy some ground beef, and so on. I was sooooo broke when I did this woe before and fed kids. So if I could do it so could you. I hope all works out well for you.

            I can freeze eggs! I CAN freeze eggs!! lol (Don't know if I'm going to try it, though.)

              Slow cooker, limit your meat portions (measure out, and then wait 15 minutes to see if you're still hungry), almost out of date meats can be found super cheap sometimes, whole chicken or chicken thighs on sale, veggies in season on sale or late in the day farmers market. Don't be embarrassed or shy about it, with farmers market vendors, they don't want to take it home!

              CHeese freezes very well, so when it's super cheap stock up. Eggs keep FOREVER even w/o freezing them, use eggs as your base and add your meats (portion controlled) to them, and your veggies too sometimes.

                  I buy everything in bulk at Costco. It lasts me a long time. Personally, I think money goes so much farther on Atkins because you aren't wasting it at drive-ins. Tell the food bank you are a low carber. They will try to help you find appropriate food choices - like spam and tuna, canned veggies and chicken broth.

                    Do you have a large freezer, food dehydrator &/or know how to do canning? If so you can stock up on even larger amounts of bulk purchases and super-dooper sales/discounts.

                    Also, if you have any room outdoors, try growing some veggies & herbs. You can also find a lot of food in the wild - fishing, crabbing & hunting, (I dig clams), wild salad veggies amngst a variety of what many call weeds, berries and nuts (later phases of the diet), and if (!!) you know what you're doing, even some wild mushrooms.

                    Some places will actually give you imperfect or blemished produce if you ask; should that be up your alley. Farmers may let you after-pick a field, too.

                      I freeze crustless quiche and the "quiche pizza" shell recipe. It is easy to make them ahead of time and they make a quick meal with some veggies added.

                        I must say that here it doesn't work the thing to "buy on bulks"... there are no bulks to buy!!!
                        And I know it's the same in other countries so I guess it must be an american thing to find in the supermarkets... 'cause here no way

                        I wanted to buy gorgonzola today but 100 gr. had the same price of 500 gr of frozen chicken *sighs*
                        it's just so crappy!

                        anyway I made the Mock Danish and that's a good way to eat eggs!
                        and well.... go for the can of tuna!

                          Tiff~I wish you the best during your unemployment time. Are there any federal assistance programs you could get temp. help for the grocery bill? Being unemployed and no income I would think you could qualify for some emergency help.

                            go to the supermarket a couple hours before it closes, fresh things are often reduced then. i just got some fish half price.

                            also, look out for buy one get one frees etc. in england, you can look on a stores website and it will tell you what food is on offer this week.

                              when it comes to fresh vegetables.....and making them last.....dont forget about all the neat tips and tricks they teach us on cooking shows....like buying fresh veggies that are in season and selling really cheap....take them home, prepare them how they need to be as far as cleaning, peeling or whatever...blanch them, cool them in ice water....then when done.....freeze them.....they'll stay good
