  • Chayote Squash = Yummy Dessert!!

    Ok, I took this from Linda's Low Carb, and modified it a bit and it turned out so good!!! I just had to share (sorry no pics).

    Fried 'Apples'

    1 chayote squash
    1 1/2 tbs butter
    3 packets splenda
    1/2 teaspoon vanilla
    1 teaspoon cinnamon
    1 tablespoon heavy cream (optional)

    Peel the chayote and cut in half, discard the pit. The chayote will feel slimy after you peel it, so just rinse and pat dry. Cut it into bite sized pieces, like you would an apple for apple pie.
    Put butter, splenda, vanilla, and cinnamon in a pan and warm on low till butter melts. Toss in the chayote, and cook on low until its soft/firm. Place in a microwave safe bowl and micro for 2 minutes.
    Pour tablespoon of cream on top and eat! Its so yummy, like fried apples.

    Per serving- 127 calories, 5.5 carbs, 11 grams fat, .5 protein.

    Makes 2 servings.

    and what a great idea it has perfect texture for doing this !!!!! thanks so much for posting it I am going to try it this weekend for breakfast I think

    ...now I am thinking it could be made into a low carb chutney ....

    I know this will come as a shock to everyone but ..the way I prepare this ...is to curry it

          Last time I went grocery shopping I saw chayote squash and nearly bought one just to try it. But didn't..now I will. What does it taste like? I"m assuming it's kind of sweet?

          I have made something similar to this recipe with jicama and it was awesome. unfortuantely I can't find jicama anywhere here anymore .

            It doesn't have much of a taste on its own, but it really takes on the flavor of the cinnamon and butter. It was SO good!! I hope you guys like it! I was thinking this would make a great topping for LC cheesecake or homemade icecream.

                Sounds wonderful! Unfortunately can't get jicama or chayote squash here in Italy. Any ideas on something that could be used as a sub? Tks.

                  the texture is perfect for chutney Megs don't you think? I am going to give it a try after this party ..I love making chutneys!!! and this may be the perfect thing to try it with!!!

                  Sally I have no idea what you could use it is a wierd squash it is kind of like a very firm slightly cucumber tasting thing maybe?
                  Jicama and chayote are both clean fresh and mildly sweet tasting ...
                  chayote has a very appley texture and holds up well to roasting it stays frim ....

                  Sunflower your recipe was great I had it last night ..I did add some lemon juice and it added just enough tartness ....

                      The version on my site does have lemon juice in it. The chayote don't have the same "tang" that real apples have and lemon juice did the trick.

                      FRIED "APPLES"
                      1 chayote squash
                      1 tablespoon butter
                      5 teaspoons granular Splenda or equivalent liquid Splenda
                      1/4 teaspoon blackstrap molasses
                      1 1/2 teaspoons lemon juice *
                      1/2 teaspoon cinnamon

                      Peel the chayote, cut lengthwise into quarters and remove the seed. Slice squash in bite-size pieces. Heat butter in a medium skillet. When butter has melted, stir in everything but the chayote. Add chayote and stir to coat. Fry until the "apples" start to turn brownish and are crisp-tender. Place in a microwaveable bowl; cover and microwave on HIGH about 2 minutes or until tender, stirring after each minute. Watch closely so that they don't bubble over.

                      Makes 2 servings

                      * I used one packet of True Lemon mixed with 1 1/2 teaspoons water.

                      With granular Splenda:
                      Per Serving: 74 Calories; 6g Fat; trace Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs With liquid Splenda:
                      Per Serving: 69 Calories; 6g Fat; trace Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

                        Oh, that is you!! Wow, that is so cool. I love your website!! I hope you don't mind my altering your dish. It was so good, you are an awesome cook! I forgot about the lemon juice (I don't have any so I didn't try it).

                            Sunflower you have your own recipe ..when you tweek someone elses it becomes yours!

                            there are no new recipes ...only new versions of ones that have already been created....

                            the fun of cooking is ...no one really owns your style
