Heat 2 tablespoons oil and add 1 cup tin tomato, or fresh tomato. Let it cook till tomato is soft and blended. Add 1 tablespoon curry powder or (1 teaspoon coriender powder, half a teaspoon cummin powder, pinch of turmeric). 1 teaspoon garlic and ginger paste. chilli powder according to taste and pinch of salt.
Let it cook till you see oil, stirring occasionally until you see oil from mixture. Add chicken and let it cook further. Add a little water if needed.
Serve with corriender sprinkle on top.152/152/130

here try this one it is a wonderful Indian/Afro Caribbean recipe and it spells some good, down home...fast and easy week day curry to me ...enjoy
1 chicken (cut in small pieces)
1 tablespoon Vegetable oil
4 cloves fresh garlic, chopped
1 sweet onion diced small
1 tablespoon Madras Curry powder (I love Betapac if you can find it)
1 tablespoon Allspice
1 tsp ginger
1 minced habanero or scotch bonnet pepper ( you can omit if you want to)
1/2 cup chicken broth
2 cut up red peppers
Heat the vegetable oil add the garlic, onion, pepper, curry, allspice, chicken broth, and ginger.
Cook at medium for a 5 minutes while stirring well .. then add the chicken pieces and red peppers. Cover the pot and put it in the oven or cook on the stove over low until the chicken is done
You can and I always do add more veggies to this recipe
