Yummy! I made these this morning and they were sooo good! Sausage Quiche Cups

1 pound sausage -- browned and drained
4 ounces cheddar cheese, shredded
8 whole eggs -- beaten
Pam Spray
Pre-heat oven to 375
Spray muffin cups with Pam or butter generously (maybe try to use foil muffin liners)
Sprinkle sausage evenly in muffin cups. (I always have a little left over)
Sprinkle about 1/2 oz cheese on top of sausage.
Using measuring cup with spout, SLOWLY pour beaten egg into muffin cups until each cup is full.
Bake about 15 minutes until set in the middle. Insert a knife in the middle to see if it comes out clean. (Watch them; every oven is different) You may broil the top during the last 3-5 minutes to get the cheese browned.
These warm up well. Make ahead and pop in the Microwave to warm up in the morning!
If you don't want to do the muffins.... brown sausage in skillet and drain, pour beaten eggs over it...cover and cook for 3-5 minutes on medium low until the eggs are set on bottom and sides. Sprinkle cheese on top and broil on low until set (about 15 minutes or a knife comes out clean). Cover with aluminum foil if the top gets brown before the eggs set. Slip onto plate and cut into 12 “pizza” wedges.
