    I just read in another thread that miss Killerbombshell is and I quote "too scared" to make soup...little girl I am callilng you out ...time for those of us who have found soup to be one of the most ultimate and easy to make poverty/sickness/comfort/luxury/family/alone/lowcarb or whatever foods

    honey it is so easy ...you can make soup ...do not be afraid ..get your asss over here and let us show you the way


    tell me what kind you like?

        ok here is one really easy one for



        CREAM OF ANY VEGETABLE SOUP

        2 pounds any one fresh veggies you like options broccoli, cauliflower, asparagus, pumpkin, fennel, asparagus, spinach, mushrooms, artichoke hearts, cut up into bite sized pieces

        6 cloves of fresh garlic smashed
        2 yellow onions, peeled and diced
        2 tablespoons olive oil
        2 1/2 tablespoons unsalted butter
        6 cups chicken or veggie stock (canned is fine )

        1/2 cup heavy cream


        .over medium high add olive oil and butter to about a 2 quart pan with a lid add sliced onion to the pan and cook until golden brown then add the garlic and veggie of choice cook just until barely tender and then add the stock ..simmer until veggies are done to your liking ...then remove about 1/2 the veggies (or all if you like a smooth soup) with a slotted spoon toss in blender or food processor and puree until smooth with 1/2 cup of cream pour this back in the soup pot simmer adding salt and pepper to taste ..done

        serve with garnishes like a handful of fresh chopped parsley, chives, sour cream ...grated cheese, bacon crumbled, whatever you like

        you can add any spices you like to make this really come alive

        2 tbl of good curry or New mexican red chile with some cumin ..whatever

          OK, this is the easiest best French onion soup ever. Obviously omit the bread, unless you are on the grains rung. And you can use a little xanthan in place of the flour, or just omit that as well. This came from my sister and I just love this soup!! (I use the canned Swanson broth). Oh and I broil it to get the cheese nice and brown. Be careful, this soup is really HOT (temperature wise)

                  From Dana Carpenders 500 Low Carb Recipes

                  CREAM OF CAULIFLOWER

                  3T butter
                  3/4 cup diced onion
                  3/4 cup diced celery
                  1 quart chicken broth
                  1pkg (10oz) frozen Cauliflower
                  1/2 teasoppn guar or xanthan (optional)
                  1/2 cup heavy cream
                  salt & pepper

                  1. Melt the butter over low heat, and saute the onion and celery in it until they're limp. Combine with the chicken broth and cauliflower in a large saucepan and simmer unti the cauliflower is tender

                  2. Use a slotted spoon to transfer the veggies into a blender and then pour in as much of the broth as will fit. Add the guar or xanthan if using and puree the ingredients.

                  3. Pour the mixture back into the saucepan. Stir in the cream and salt and pepper to taste.

                  Yield: 4 servings, each with 9 grams of carbs and 3 grams of fiber for a total of 6 grams of usable carbs and 7 grams of protein.

                  (my note: garnish with some shredded cheddar and a little parsley)

                    here is one of my favorites

                    ok this will knock your socks of I swear it is beyond easy!!!!


                    Creamy curry chicken, shrimp or crab soup

                    1-2 lb of boneless chicken breasts cut into bite sized pieces (or shelled crab or fresh peeled shrimp)
                    4 cloves garlic
                    4 stalks celery diced
                    1 red bell pepper diced
                    1 minced habanero
                    1 onion diced
                    2 tbl butter
                    2 tbl olive oil
                    3 tbl good madras curry powder
                    1 tsp cumin
                    1 tsp ginger
                    6 cups chicken stock (canned is fine)
                    salt and cracked pepper to taste
                    1 can coconut milk
                    1-2 juicy limes squeezed


                    saute the veggies with curry powder and cumin in the oil and butter in a 2 quart pot until just tender but not browned then take and toss in the blender or food processor with some of the stock and process until smooth
                    return to pot and add the stock, coconut milk and meat bring to med high and simmer just until the meat or seafood is done...the crab just needs to be warmed through the shrimp is done when it turns pink and the chicken takes about 10 min check for doneness add the lime and cilantro and serve

                        Ok this is the wonder soup full of phytos for the berry rungers

                        Berry soup
                        1 1-pound bag frozen unsweetened berries of your choice
                        1 cup water
                        5 packets of splenda (I use about 2-3 I like this tart myself)
                        2 1/4-inch-thick lemon slices
                        1 cinnamon stick
                        Pinch of salt
                        1/2 teaspoon vanilla extract
                        1/4 cup lemon or lime juice fresh squeezed
                        1 cup sour cream or Greek yogurt
                        reserve some sour cream and chop fresh mint for garnish

                        in a sauce pan put everything but the sour cream in a deep saucepan bring to a low boil stirring constantly until the berries are softened
                        remove from pot and puree in blender or food processor with the sour cream
                        pour directly into small cups garnish with a bit of sour cream or yogurt and chopped fresh mint
                        makes 4

                              Ooohhh this next week might be liquid Atkins diet LOL!!!

                              I absolutely HAVE to try that berry soup!

                              And Barb, since i see you are in florida, have you gotten any of those gigantic sweet onions that they grow in the strawberry fields with the strawberries yet?? I swear one of those onions lasts this household for like 2 weeks.
