    Hi

    Just found Ellizen's flax bread recipe saved on my PC (there's something wrong with the main recipe sections) and can not believe how great it is! So easy to make and great with the low carb tomato soup I rustled up!

    At last, I can have soldiers again with my boiled eggs in the morning!!!

    Thanks Ellizen (BTW - can you keep it in the bread bin/fridge for 24 hours)

      Glad you like it Zara.

      It keeps for several days in an airtight container in the fridge.

      Recently to make it taste a little lighter I have been adding a few tablespoons of plain old water and cooking it for an extra minute. This makes the bread rise a bit more

      I use that recipe with variations a lot, and now my DH is on maintenance and never lost his sweet tooth I often make him flax cake or buns by adding some Davinci sugarfree syrup and berries to the mix - even apple cake by cooking a sliced apple in a Tablespoon of Chai sf spiced tea then pouring the 'batter' sweetened with vanilla sf syrup over it and microwaving it!!

      Now I am on OWL and can have nuts I often make almond cake for family using ground almonds and some Davinci vanilla or Almond sf syrup.

      My latest success was an almond swiss roll. Using ground almonds in the recipe and adding 2T vanilla Davinci plus 3T water I poured it into a baking dish lined with greaseproof paper but used only about 1/4-1/2 inches depth of the batter (about half of the recipe).

      Then nuked it for 2 minutes.

      While still warm I took it out of the dish and rolled it up loosely in the paper and left it to cool .

      Then mixed about 50g of waitrose cream cheese (less carbs than philly) in a bowl with a tablespoon of granulated splenda and unrolled the cake and spread that inside it and rolled it up again.

      Left it in the fridge for a day to chill (also to stop him finding and eating it before time!)

      I dont eat much sweet stuff but for a Sunday Tea treat it was delicious!! My family thought I must be cheating as it couldn't be 'legal' it tasted so good!!

      If I had thought earlier I might have microwaved some berries till soft, cooled it and spread that on the cream cheese to make it more interesting.

      If you are on induction you could make this with ground flax.

      Try adding your own (legal) variations and see what you come up with.

      But remember if you are on induction you can only have flax to aid constipation issues and then only 1 Tablespoonsworth to start with - too much can make the bathroom proboems worse!!

      Warning - Dont go mad with flax till the seed rung!!

        Hi there

        Thanks for your long reply and all the tips - I will have to try those! I am on the seed rung but am concerned that I could go over the top with flax... if truth be known, I made your bread this morning and had four slices with soup for lunch and then the other four slices 'toasted' with a small salad for dinner. I think I need to be a bit careful or I could be consuming a lot of carbs each day just in flax!

        Anyway, thanks again for the recipe and info.

                There is a problem with the recipes board so I will re-type it:

                Microwaved Flax Bread
                Serves 2 - 8 slice loaf
                285.5 cals per half loaf
                prep time: 4.5 mins max

                Ingredients
                25g (1 oz) butter
                2 medium eggs (large also OK - added by Zarabelle!)
                4 heaped tbsp ground flax
                1/2 teaspoon baking powder

                Melt butter and add eggs and mix.
                Add ground flax and baking powder and mix until smooth(ish)
                Leave a minute or two to thicken up then put in to microwaveable container about 5" x 4" and nuke for 3 minutes
                Turn out and cool
                Makes a dense loaf, quite spongy but less so when it cools.
                Good for sandwiches, toast and grated as breadcrumbs
                You could add parmesan and herbs to make a savoury loaf

                I added a tbsp of mixed seeds and the sprinkled poppy seeds on the top and it was devine! I had four slices (kind of like bread fingers) for lunch topped with cream cheese and cheddar and served with low carb tomato soup http://users3.ev1.net/%7Efontlady/cr...mato_soup.html and it was the best lunch ever. If you try the soup, I halved the amount of cream and added some garlic and chilli as I love those flavours.

                Hope you like the bread (and soup) as much as I do. I plan to make a seed loaf every other day and have half a day - it's that good.

                  Meant to add that I make the loaf in a chinese take-away plastic box. When the loaf is cooled, I think transfer to another (identical) box and put on the lid and put it in the fridge. Easy.

                      If I don't have a 5 x 4" container, would a reusable/disposable sandwich container work?

                      Sounds great, but will the slices be narrow? Does it hold together well, like for a real, honest-to-goodness sandwich (Like BLT, I'm thinking) or is it strictly for putting spreads on, open-faced style?

                      I like how it doesn't take any special ingredients. I haven't had my flax muffins cuz I don't have soy protein isolate.

                        It does hold together for real!

                        If you want to make a sandwich, I think you'd need to use the whole loaf and cut it down the middle (lengthways) - you would then be left with two slices of bread. If you cut four slices off - they are very small - say 4" by 1" so are excellent for dipping in eggs or spreading cheese etc. on.

                        Not sure if a sandwich container would work. A bowl would but obviously then you would end up with a round loaf!

                        You gotta try it - you could make a mean BLT with it. In fact, I may even make one tomorrow with it for lunch - thanks for the idea x

                          I split the mixture into 2 small round bowls to make 'burger buns' and sprinkle some flax seeds on top.
                          When cool I then slice them in half and toast to have with my homemade cheeseburger!

                            Thanks for the ideas! Do you mean a cereal bowl? I have Correlle bowls, they might be the right size. I'm not choosy about round bread. I had a round breadbaker for a while before they started making them square. Besides, bologna would fit better!!

                            OOOOOHHHHH! Buns for the burgers for a change!! Then I could have pickles and stuff on them like REAL burgers! Why am I suddenly hungry again after a big salad and almost a pound of butter-fried catfish?
