then slice the zucchini, sprinkle the slices liberally with salt, put them in a colander, and allow it to sit for 30 minutes to an hour. Then rinse off the excess salt, pat the slices dry, and proceed with the recipe.

Again, if it's too runny even after salting them, add chicken broth and make it into soup. OR add beaten eggs to it and bake it like a quiche.
