    I like the idea of using ground black pepper to coat the cheese ball, since many cheese balls have nut coatings.

    I suppose if you are very ambitious, you can make individual serving size cheese balls.

    Sounds great, Megs! I love pepper so I printed the recipe and will make it when I get the ingredients and I know there will be people here to help me eat it.

    That looks yummy, however what would you eat it with. Being that I don't imagine a Ritz is Atkins friendly??? I have known to be wrong lol

    Put it into a piece of bell pepper, any color, place some on a leaf of lettuce and make a wrap, eat it on a flax cracker or with mims (search the Atkins recipe forums for these simple microwaved recipes. Spread some on cucumber rounds, sliced jicama or kohlrabi, any lo carb raw vegetable or with any atkins friendly protein or just have a spoonful without anything else. There are probably lots of other options, but yes a Ritz cracker is off limits for most of us.

    In addition to the veggies, pork rinds would do nicely with this too. Also a spoonful of this in an omelet would do nicely.

    We're expecting a snow " event" (seriously, that's what it's being called a snow event, not a snow storm, but a snow event) this weekend. I'll try to buy the ingredients during my lunch hour today or tomorrow and try this thing out!

    me too. Awesome dish. Loved it and I had it with some homemade Flaxseed crackers - fantastic!!!!
