I brought this to a party over the weekend. It was a hit! I brought celery sticks to serve with it. Adapted from Great Balls of Cheese by Michelle Buffardi

Buffalo Chicken Cheese Ball

1 cup cooked chicken, finely shredded/chopped
1-2 tablespoons hot sauce (I used Huy Foods Chili-Garlic sauce)
8 ounces cream cheese, softened
2 ounces blue cheese
2 green onions/scallions

Toss the chicken with the hot sauce. Set aside.

Chop the green onions, separating the white part from the green part.

Combine the chicken, cream cheese, blue cheese and the white part of the chopped green onions together. Mix thoroughly.

Lay a piece of plastic wrap in a bowl. Place the cheese mixture on it. Gather up the corners and edges of the plastic wrap and twist, forming the cheese into a ball. Refrigerate overnight. While it's settling, you can remove it from the bowl and form it into a nicer ball.

Before serving, unwrap the cheese ball, roll it in the green part of the chopped green onions.

You can double this recipe too. And if you don't feel like forming a ball, pack the cheese mixture into a nice serving container instead.

If you don't have Chili Garlic Sauce, use the hot sauce of your choice and add a finely minced garlic clove or a teaspoon of garlic powder. And if you don't want garlic in it at all, don't use it.
