    Default Cauliflower Popcorn

    Raw buttery popcorn recipe | The Rawtarian

    I read a similar recipe in a book on drying food. The above recipe is vegan (raw food vegan to be exact) and uses nutritional yeast to creat a 'cheesy' flavor.

    Unless you have a jar of nutritional yeast on hand, use real cheese like Parmesan or Asaigo, etc.

    This recipe uses chili powder and lime to flavor the cauliflower popcorn:
    Chili Lime Cauliflower Popcorn {a grain free, gluten free, dairy free, raw snack made in the dehydrator}

    Roasted cauliflower is incredibly yummy, imo, especially if it's golden brown all over. So I figure this will be sort of like it.

    I plan on trying the recipe soon. But I'll use frozen cauliflower, defrosting it and putting it into my electric dehydrator. I'll report back how it goes.

    If I remember if for tomorrow, I'll post the book's instructions on dehydrating the cauliflower in an oven.

    I tried the recipe over the weekend. I used 2 pounds of frozen cauliflower, which I defrosted. The 2 pounds dehydrated to an amount that could fit into a 2 cup measuring cup. 2 pounds of frozen cauliflower has approximately 20 net carbs.

    The cauliflower was crunchy and it had a nice flavor. But unless you are on OWL phase or beyond, I wouldn't do this recipe. The amount is so little that it would be easy to eat well over your carb amount in one sitting.
