    Default Cauliflower Popcorn

Here is something I'll try sooner or later

    Servings: 4
1 lb. cauliflower, chopped into small florets
2 Tbsp. extra virgin olive oil
    1 Tbsp. Italian seasoning
    1 tsp. seasoned salt
    tsp. granulated sweetener, like Splenda
    1. Preheat oven to 400F. Line baking sheet with aluminum foil and grease with nonstick spray.
    2. Add cauliflower florets, oil, seasonings and Splenda to plastic bag. Shake bag to coat evenly
    the cauliflower.
    3. Arrange cauliflower in single layer on baking sheet and place in oven. Bake for 50-60
    minutes, stirring every 15 minutes.

Me too! How fun Spica. Pretzels and popcorn are the few things I miss from my low fat diet days. This is a must try and see recipe. Thanks!
