    Default Oh Gosh - Coconut Ginger Fat Bombs!!!

    I've been looking for ways to get more fat into my system. While searching the hundreds of fabulous low carb recipes online, I came across Coconut Ginger Fat Bombs and thought I would give them a try.

    And WOW, when I did sparks flew! I'm in LOVE!!

    Coconut Ginger Fat Bombs

    Prep Time: 5 mins
    Sugar/Gluten Free

    1/4 cup + 1 Tbs coconut butter, softened
    1/4 cup + 1 Tbs coconut oil, softened
    1/8 cup shredded coconut (unsweetened)
    1 tsp granulated Stevia (or preferred sweetener to taste)
    1 tsp dried (powdered) ginger

    Mix all ingredients in a pouring jug until the Stevia is dissolved. (I used a mixing bowl and whisked until dissolved)
    You can use silicon molds or ice block trays (I filled each mold with 1 to 1.5 Tbsp of mixture. Makes appx 10 fat bombs)
    Refrigerate for a minimum of 10 minutes. (Very good overnight!)

    Sugar: 0.1g
    Fiber: 1.4g

    This would be okay for OWL Phase due to the coconut shreds.

    For people with sweet tooths---use it cautiously because it might reawaken the sugar monster within!!!!!!

    Good point on the sugary thing and, no, not for Induction! Personally, I've found fat bombs are more than satisfying, and in a few ways. Yes, they are somewhat sweet tasting but when I eat one, I feel like I am getting a lot of fat even more than sugary stuff - which is a very good thing for me. Just by eating 1, I am totally satisfied for hours.

    Again though, good point made on sweet tooths. If anyone has a problem with sugary temptations, these may be an issue. I'm a pasta/bread girl so I do fine with them.
