    Adding some cooked meat like minced chicken or beef would be a good idea.

    Boy-o-boy, that looks great! I'm working on a huge bunch of yellow squash, 13 plus a double one and also have to fix up 7 bell peppers (red, yellow and orange) today. Certainly, the yellow squash can substitute for the zukes? I've got enough to do several different things, but they've been sittin in a plastic bag going on 3 days since bought at farmers market in the marked down section.

    Already I tried re-using the salt-n-peppered apple cider vinegar used for some cukes at lunchtime, and the squash is good in that, too.

    You're absolutely right that those yellow squashes can substitute for the zucchini!

    That looks to die for!!! A 'must' try with zucchini and squash...maybe eggplant too! A bit of minced meat in there would be good too, as you say, Megs.
