  • Pizza in a Bowl

    I've been meaning to post this for a while... it's one of my favorites and Induction friendly.

    I used to make these one at a time, but for the time it takes, it's worth making AT LEAST 2 at a time. I only make 2 because I only have 2 bowls.

    The following will make 2 BIG servings in separate oven-safe single serve bowls (I forget what they are called - people use them for French Onion Soup and Creme Broule' (sp?)). The bowls I use will hold 2 cups of liquid from empty. They are pretty big.

    NET Carb Count: approx 8 carbs - worth every one!! Once you modify the recipe to your taste, this may increase or DROP.

    Ingredients:
    1 cup diced petite tomatoes from a can (5 carbs, 4 net each bowl)
    2 slices cheddar cheese (mine was 0 carbs, I count as 1/2 carb per bowl)
    1 cup shredded mozarella cheese, divided (2 carbs per bowl)
    1/2 cup sliced, canned mushrooms (1.5 net carbs per bowl)
    20 slices pepperoni (approx #, 0 carbs)
    1/2 lb. sausage or ground beef (I use Jimmy Dean sausage varieties, 0 carbs)

    PREHEAT oven to 350 degrees.
    • Cook sausage. Add seasonings to taste. I use pizza seasonings. I've also tried oregano, onion powder, garlic, black pepper, etc separately. I just tried adding green onion today, only about 1 tbsp at 0 carbs.
    • Add 1/2 cup diced petite tomatoes (w/ juice) to each bowl.
    • Place a slice of cheedar cheese on top (you may decide to change your cheese here, I've also used mozzarella for the whole recipe)
    • Add 1/4 cup mushrooms per bowl, spread evenly
    • Add ground sausage or beef, 1/2 mixture per bowl
    • Add 1/4 cup shredded mozarella per bowl
    • Add pepperoni - I usually layer evenly in a circle and place one in the middle
    • Add last 1/4 cup shredded mozarella per bowl
    Place bowls on baking sheet and bake for about 20 minutes to melt cheese through. Watch throughout and cover if necessary if you don't like your top crust too crusty. I then turn oven off and leave in for another 10 minutes.

    Serve and ENJOY!!!

        I tried this and REALLY liked it. I crave pizza ALL OF THE TIME so I am SOOOOO thankful you posted this recipe.

          THANKS! I made it for lunch today. I was so famished after school that I had the other serving. Ohhh noo...I love Atkins food too much. Sigh.

            OHhhhhhhhh my gosh! This sounds DE-LISH! This is one of those Friday or Saturday night "treat" dishes! Thanks for the recipe. I bet this would be good if you just cut a slice of tomato for the base (to cut back on the carbs a little). You could sprinkle the tomato with a bit of olive oil and italian seasoning to make it taste more like a "sauce." Yumm-mee!

            This is one I'm most definitely going to try! I'm even going to buy some of those bowls you're describing for this one! This board rocks! I can't believe how creative people are!

                I made this on Saturday night and they were VERY GOOD!!! Even my husband who is not on Atkins enjoyed them WITHOUT the crust! I went to Target and bought little Ramekin dishes like you used (Souffle bowls), 10oz. size. I did this variation.

                Ground (pre-seasoned) Italian Sausage
                Tomato
                Eggplant
                Mushroom
                Mozzarella Cheese
                Olive Oil
                Salt
                Italian Seasoning (my new favorite seasoning! LOL )
                2 Ramekin dishes (Souffle bowls)

                Preheat oven to 400 degrees F

                Formed two patties with italian sausage (small enough to fit into Ramekin dish). Fried and drained well.

                Washed and cut two slices of eggplant (roughly 1/2" thick) and tomato (roughly 1/4" thick) and layed them on plate. Used fresh mozzarella and sliced it thinly and layed it on plate. Drizzled all of it with olive and sprinkled with italian seasoning and salt.
                Layed 1 slice of Eggplant in bottom of Ramekin, then tomato. Placed in microwave covered with paper towel on 7-high for 5 1/2 minutes (1000w oven). Took out, put on baking sheet and placed drained sausage patty on top of tomato. Put very small amount of mushrooms on top of patty (well under an ounce...maybe half ounce), then put mozzarella on top.

                Put in oven for 5-10 minutes to melt cheese. Remove and let stand for 5 minutes before serving.

                YUM-MEE!!! I have my new Atkins induction-friendly "PIZZA!"

                  I'm gonna have to try this!!!! Hunts makes a garlic/oregano tomato sauce that's naturally low carb--I use it on bikergoddess pizza. I wonder if that can be used as well...

                      I haven't tried this yet, but will this week. I have two teenagers and they will love the fact that we can have pizza again. I'm thinking I'll add some pizza crust topped with oil and garlic for them. Then they can just layer the casserole on the crust if they want to. You could even wrap this in a LC tortilla if you wanted a crust and could afford the carbs.

                      2. Use bike more (3x per week would be nice).
                      3. Continue with videos.
                      4. Go to the YMCA for water classes.
                      5. Build stamina for more walking.


                      Goals for May:
                      1. Water every day - at least 100 oz.
                      2. Walk through Wal Mart instead of ride.
                      3. Post every day.
                      4. Get the exercise bike out of basement and use it!
                      5. Re-read DANDR! It's been too long.

                        Wow! I made this recipe this week, and we all loved it. I had some left, and took it for lunch the next day. It was even better the next day. It sure beats not having pizza!
