Super Easy Casserole
2 cups cooked meat *
1 pound bag of frozen vegetable (your choice)
1/4 cup sour cream
1/4 cup mayonnaise
1 teaspoon onion powder
3 ounces cheese, grated (your choice of cheese)
1 teaspoon crushed red pepper flakes (optional)
*Can substitute a pound of cooked ground meat or cooked sausage
Empty the contents of the frozen veggie bag into a microwave safe container. Microwave on high 4-6 minutes until the vegetables are completely defrosted and hot. Remove from microwave, set aside. Drain any water out.
While the vegetables are microwaving, combine the sour cream, mayonnaise, onion powder, 2 1/2 ounces of the cheese and red pepper flakes (if using) together. Mix this together with the veggies and the cooked meat. Pour into a microwave safe dish. Top with remaining 1/2 ounce of grated cheese. Microwave 4-5 minutes until the casserole is hot and the cheese is melted. Allow to sit for a few minutes before serving.
This casserole can also be baked in a conventional oven.
The frozen veggies that do well in this dish are cauliflower, broccoli, and green beans.
