I absolutely love pozole, but never cook it because it has hominy and thats not allowed. But this year the kids all asked if I would make it for them, so I did, but I made my own and it was delicious.
Pozole without the Pozole Soup
Two of those large boxes of Chicken stock
Two large meaty hamhocks
Two chicken breasts.
One onion chopped
A scant Tablespoon of Mexican Oregano.
Cook the hocks, onion and oregano in the chicken stock until hocks are done, remove and let cool, then take off the meat and toss the rest. Add back to stock with the chicken breast, cut into bite sized pieces.
When cooked and tender, serve with the following condoments.
Cubed cream cheese
Diced Red Pepper
Diced Jalapeno
Sliced lettuce
Sliced green onions.
and a slice of lime.
