    Rosemary Chicken with Proscuitto, Fontina and Roasted Red Peppers



    May be baked or grilled!



    Place the chicken breast between 2 sheets of plastic wrap and pound out with a wooden mallet.







    Remove the plastic wrap and place one or 2 slices of proscuitto on the chicken







    Place slices of fontina cheese on top of the proscuitto







    And then slices of roasted red pepper (you can roast it yourself of use the kind that comes in a jar)







    Roll the chicken and secure it with a skewer

    Season all sides with rosemary and a little salt and pepper.







    If you are going to bake the chicken pour about 1 cup of white wine over it and place in a preheated 350 degree oven until done, or you can grill the chicken, baste it with the wine as you go.

        WOW!!! That looks so good! I'm gonna have to try that when I'm in OWL!!!! I guess I could substitute chicken stock in place of the wine have have it during induction. woo hoo!!!

              Wow! That sounds great. now that I received a "set it & forget it!" rotissiere for xmas, I will get those skewers going. It looks sooo good.

                  LOL LiR! Now you've gone and got that darned song going in my head again!

                  thanks everyone. Bio, I don't see why it wouldn't be just as good with the chicken stock or maybe even a little olive oil.

                            that looks really yummy. I make a rosemary chicken with a whole roasting chicken, butter and rosemary. Id have to skip the peppers in yours (allergic) but that looks super easy!
