  • MMMMM Spaghetti Squash

    This is one food that I NEVER ate pre-Atkins. Never even tried it! OMG. I am in love with this vegetable!
    The rest of the family is having their pasta and sauce and I am having my sauce over the spaghetti squash, with some ricotta thrown in for good measure!! Feel deprived of pasta?? Not a chance! Way more flavor in the squash!!!

    .... funny you should mention this squash ...because I have been addressing it lately and trying to make it into a recipe I could actually find edible.....


    so far it is like some relationships in life....I just can not seem to make it work!!!! ..it is still stringly tasteless squash!

    it is not a summer squash that I could lavish with fresh basil and tomato and cheese..

    it is not a winter squash that I could work with some warm soulful spices to make wonderful curries and soups...

    it is kind of tasteless with squashy after taste...and stringy as helll.....I am so puzzled as to how to make this work for me

    whqt is it really???? your joy eludes me and pasta it ain't

    I have one more big spaghetti squashe ...here looking at me on the table and might try something with some chile, cinnamon, ginger and cillantro...if that does not work....

    I will chuck the entire thing against the wall and call it good....

    so what do you do with this stuff that makes it work for you Barb????? enlighten me because so far I am just not getting it .....

    defeated by a squash is not how I want to spend the rest of my life you know

      Good for you barb. I know some folk love it and others don't just like any other veggie.

      chile, ginger and stuff sounds like something interesting.

        Yeah......... chili and ginger............ let me know how that turns out, K?? ( )

        I simply cut in 1/2 long ways, scoop out the seeds, put it face down in a pan in the oven and bake it. It's supposed to be stringy silly! Hence the "spaghetti" part of the name?? Overcooked it's really mushy. I like it to still have a little bit of crispness to it. Usually I have it with my homemade tomato sauce or even just with some butter, a spinkle of cinnamon is good with the butter too! Yummy!!

          ok I have one left...this is what I am going to do....

          saute some garlic, with chile, ginger and cumin
          add a diced tomato salt and pepper....then I will toss the cooked to crisp not mushy "spaghetti" squash into it ..then garnish with fresh cillantro......and see what happens..if this does not enhance the qualities that you find in this weird thing that claims to be a squash..then it gets tossed....

          I can only work just so hard at any one thing

                barbde, I like spagetti squash best a little undercooked, too. I put the flesh on a plate with a drizzle of olive oil and add a hot mixture of oregano, garlic, tomato sauce, onion, and hamburger meat on it.

                It is also good with just some melted cheese on top!

                  I too have not gotten the hang of spaghetti squash. I love acorn, butternut etc etc. roasted with butter (no sugars or sweetness, even before Atkins). but the spaghetti squash I just cant impart any flavor into. Heidi, Im waiting on your results as well!

                    I will let you know ..it is fun trying new things ... and it is fun trying to over come food bias....

                    I have yet to overcome flax and pork rinds...but I have many other things ..thanks to the help of folks here ..

                      do you have any asian sprout recipes? those might work for you.

                          I love my spaghetti squash in an alfredo sauce. I cook mine like barbde but I put it in the microwave and then scrape out the string of squash. I steam up some broccoli and mushrooms and cook some chicken chunks in a fry pan. I make the sauce with heavy cream and parm cheese with melted butter and garlic. Sometimes i micx in a little sour cream to thicken it just a bit Toss the squash with the veggies and chix, pour the sauce over it and enjoy it. It is sooooo good... Yum....
