Seeing as I've just found Flax Meal -finally- at one of our grocery stores, I'm all geared up to try some recipes!! So I'd love to know some of your favorites or ideas on how to use it!!

3 tablespoons flax meal
1 egg
1/2 teaspoon baking powder*
2 tablespoons butter
1 teaspoon splenda
2 teaspoons cinnamon
* I make my own baking powder with 2 parts cream of tartar and 1 part baking soda. If you're using it right away, cornstarch isn't necessary.
Melt the butter in a microwave safe bowl for about 10 seconds. Use one that will be large enough for your ingredients to fill it about 1/3. Stir in the flax meal, then the egg, then the baking powder, cinnamon and splenda until it is well blended. Scrape the sides. Microwave about one minute or until the center is set. The muffin will rise above the edges of the bowl and settle when you turn the microwave off. Let it sit a minute, remove from container, let cool a little and eat it.
It was very good, a nice cinnamon flavor, but not too much. It was a little heavy, I think I could eat half at one sitting and another half later. Tasted like a whole grain muffin.
The total count for one muffin was
384 calories
35g fat
12g total carbs (4 net)
11g protein
It's pretty fatty, but I think it's great as a snack or breakfast with a protein.

I haven't had this one but it sounds good.
Hot Flax Cereal
1/4 cup flax meal
1/4 cup cream
1/3 cup water
1 pkt splenda
cinnamon
Mix all ingredients and microwave for 2 minutes.

I had those flax muffins once and they were REALLY good...not sure why I never made them again...guess I just don't venture as much as I used to. the only problem I had was you needed a lot of butter on them...at least for me!Higgies

Here's one to try, there are a bunch of variations for this also, from using sugar-free pudding mixes to a savory version of this bread.

dry

2c flaxmeal (I use Bob's Red Mill)
1c nuts/etc. *
1/2c Splenda (box, not packets)
1tsp baking powder
1tsp baking soda
*i usually use chopped almonds or pecans (can't remember which right now!) that net out at like 1ca per 1/4c - take a look, you'll find them! i also sometimes will mix 1/2c nuts with 1/2c unsweetened coconut (also lc!). get creative here!!!

5 eggs (beaten)
8T sf syrup w/Splenda **
5T vegetable oil (i use canola)
**so far i've tried hazelnut or banana, depending on what i use above for nuts/etc.
pre-heat oven to 350F
mix together all dry ingredients in a bowl, then in a separate bowl, mix all wet ingredients. fold dry ingredients into wet and mix well (don't beat like crazy, but be sure it's mixed well or the eggs do funny things!).
immediately transfer batter to Pam/etc-sprayed loaf pan (i've had better results not waiting the 5min. i've seen suggested - baking soda is active immediately when wet, right?).
bake at 350F for 35min. or until it passes the knife/toothpick/etc. test.
remove from pan immediately and cool before slicing. i slice into 16 as follows: slice lengthwise down the center, then cut each half into two equal halves on the short axis and then in half again.
store these in tupperware/rubbermaid in the refrigerator - they keep just fine for the 8 days that i have them around.
i usually slice mine in half and toast in the toaster oven and have with butter or cream cheese - although it's great cold, too!
i've really worked on this recipe and i hope you enjoy it! i don't like things too greasy, eggy or sweet, so i've tried to address that with this recipe. be sure and experiment yourself and remember to have fun!
as far as the nutritional breakdown? my shot at fitday says, per serving:
171 calories
14 g fat
1 g saturated fat
5 g carbs
5 g fiber (look ma, net ZERO!!!)
7 g protein
(pretty nice, eh? now i don't want to get into how carbs are counted, etc., this is just what i use. i've not subtracted fiber from anything in the 5g carb count. the flaxmeal i use is net zero, since it has 5g carb and 5g fiber per 1/4c (i think that's the serving size they use))

Parmesean Flax Crackers
2 tbsp flax meal
1 tbsp parmesean cheese
1 teaspoon your favorite spice
1 tbsp water
Mix all ingredients to form a paste (you may need a little more water). I let it sit for a couple of minutes and then spread out thinly on parchment paper, Microwave for about 2 minutes, depending on your microwave.
These are great for using like regular crackers, I like to spread them with homemade pimento cheese, or peanut butter or top with any type of low carb items you prefer!

When it comes to adjusting a microwave recipe for the oven I think trial and error is going to be your best bet. I know a few of the low carb recipe's from Linda's site are oven friendly and if you do a search for flax meal recipes you're bound to come up with a bunch.

I use my flaxc meal muffins recipe is in our recipe database.
I like flax and proteinpowder cereal and if I over cook it I get cake 2T of each mixed witrh 1/4-1/3 cup water does fine if you don't have a microwave add boiling water to it and stir and lewt sit. if you over stir your flax you get slime as they have a chemical similar to egg whites in them that developes with water and heat.by the book atkinseer

I took the dough out, divided it into three equal parts (which turned into huge rolls, I will divide further next time) and let proof in mini aluminum baking tins for about 45 minutes.
I placed into a 400 degree oven for 20 minutes, then at 300 for five. These baked faster than my previous attempts, next time I will bake less.
The rolls are very breadlike, have a great flavor (not flaxy at all), great texture, and with WPI instead of VWG are virtually 0 carbs (the only carbs should come form the polydextrose, which is quite low, and the flax seed).
