  • Salmon.

    Ok, its competition time. No prize except for the knowledge that you have helped your friendly british admin out.

    Tonight I fancy cooking myself something with salmon.

    What can you suggest!? Full ingredients and cooking method required please. You have 1 and a half hours from this posting to come up with your suggestion.

    Heck, there will be a prize to the one that I like the sound of. POst away ladies and gents

    go simple and just grill it with lemon juice and capers sprinkled on

          OK, Rich, is this a little more exciting?

          Kate's Secret Silver Salmon Sauce
          • Rinse your Salmon fillet or steak in cold water then pat dry. Place fillet on a large piece of tinfoil and cover with secret sauce. To make the secret sauce combine the following ingredients:
          3/4 C. Mayonnaise (or half sour cream or half yogurt)
          1/2 Tblsp. Dijon Mustard
          1/2 Tsp. Dill Weed (More if you have fresh dill)
          1/8 Tsp. Course Ground Pepper
          Pinch of Curry Powder
          Pinch of Cumin
          1/2 Oz. White Wine
          1/4 Tsp. Thyme
          1/8 Tsp. Paprika (Optional)
          1/4 Tsp. Lemon Pepper
          1/2 Tblsp. Soy Sauce
          1 Clove Garlic, Finely Diced
          1/2 Onion, Diced
          Juice of 1/2 Fresh Lemon


          • Spread a thick layer on the fish, seal it up and bake in a preheated oven at 350°, or throw on the grill or cook over the campfire. Cook for 20 to 30 minutes for a coho (silver) fillet. The rule of thumb is cook 10 minutes per inch of thickness, measured at the thickest part of the fillet or steak. When done, the fish should flake easily when prodded with fork.
          A nice mixed green salad is the perfect compliment for this nutritious, delicious meal.

            FAST Nuked Spicy Salmon Steaks
            (for 2 servings)
            Ingredients:
            2 salmon steaks, 1 inch thick, each 6 to 8 oz.
            1/2 tsp. worcestershire sauce
            1/2 tsp. lemon juice
            1/4 tsp. cajun spice blend or blackened redfish seasoning
            1/2 medium-sized green bell pepper, stemmed, seeded and diced
            1/2 medium-sized red or yellow bell pepper, stemmed, seeded and diced


            (Note - there's lots of room for variations here. You can substitute catfish, swordfish, tuna, etc. for the fish, and different kinds of peppers. Worcestershire sauce can be replaced by other marinades, and you can add onions, tomatoes and dill in with the peppers, if you prefer.)
            Arrange steaks side by side but in opposite directions in a baking dish; press thin belly flaps together, against other steak. (If cooking 4 steaks, arrange in a circle with belly flaps toward the center of the dish.) Rub the top of each steak with 1/4 tsp. worcestershire sauce (or other marinade) and 1/4 tsp. lemon juice, then sprinkle or rub with 1/8 tsp. spice blend. Sprinkle peppers (and other optional veggies) over fish in center of the pan.
            Cover dish tightly with plastic wrap and microwave on high (100% power) until flesh is nearly opaque, 5 1/2 to 6 minutes. (if varing # servings, cook one steak 3 1/2 to 4 minutes; 4 steaks about 7 minutes.) Let salmon stand, still covered (puncture plastic wrap if tightly sealed), 1 to 2 minutes longer.

              Lemon Grilled Salmon

              2 t. dill
              1/2 t. lemon pepper
              1/2 t. salt
              1/4 t. garlic powder
              1 1/2 lbs. salmon fillets
              3 T. chicken broth
              3 T. olive oil
              3 T. soy sauce
              3 T. finely chopped green onions
              1 lemon, thinly sliced

              Sprinkle fillets with the spice mixture. Place in shallow glass container. Mix wet ingredients and green onions and pour over fillets. Refrigerate one hour turning once. Drain and discard marinade. Grill fillets skin side down, arranging lemon slices on top. Grill 15 to 20 minutes. Fillets may be broiled instead by placing on greased broiling pan, broiling 3 to 4 inches from heat for 6 to 8 minutes or until fish flakes easily.

              Serve with steamed asparagus and hollandaise.

              I do a microwave hollandaise... melt a stick of butter in a glass dish. Beat two egg yolks and whisk into the melted butter. Add a tablespoon of lemon juice. Microwave 30 seconds at a time, whisking at intervals, until sauce thickens. A pinch of dried mustard and dash of salt help it along as well.

              Green beans amandine (French style green beans, beef boullion cube, splash of lemon juice, toasted almond slices) also go well with this dish. And, of course, a fresh caesar salad (romaine lettuce, baby spinach, parmesan, caesar dressing).

                I prefer to keep my salmon simple because I love the fresh flavors of it.

                Get your grill screamin hot. (or a grill pan if no barbeque).
                Drizzle a little olive oil on salmon pieces, sprinkle with fresh cracked pepper and sea salt.
                Toss skin side down on grill. Cooking time will vary depending on size of salmon pieces.


                Variations-
                Add rosemary sprigs (whole sprig, not just leaves) on top of salmon, wrap in aluminum foil. grill ~5 minutes depending on size of fish.
                If the salmon is less then stellar quality, I use a lot of garlic (3T for a normal portion of fish) with olive oil and cook on a lower heat.
                If you like "all in one" type meals, you can make the salmon in a foil pouch with fresh veggies like green beans, broccoli, etc etc. add a little butter on top of the salmon when finished and the flavors are fabulous.

                Key with salmon is NOT overcooking it. You dont want to pulli t off the heat when it starts to flake. You want to take it off before flaking otherwise teh carryover cooking is going to make it overcooked and dry.
