  • OWL - Dairy - Homemade Yogurt

I'm finally getting my yogurt made today (yay!) and wanted to know if anyone else out there makes their own.

I'm using the recipe in "French Women Don't Get Fat" because it is so easy and the last time it turned out perfect.

Let me know if you do the same and how you like it.

BTW, is this considered Greek Yogurt? (The ingredients are only four cups of Two Percent Calorie Countdown Milk and one tablespoon of plain yogurt.)

Update: As I've been browsing around on the forum tonight I found out that Greek Yogurt is made with more cream.

At least I got that settled.

    Yay!

In the Low Carb Cooking Lesson's Forum (hidden in the Lesson's Forum) there is a HUGE thread about yogurt and another one about Cheese making.

I've made my own yogurt. Can you share the recipe you used Kat?

The recipe I use is as follows:

1/2 gallon of whole milk, heated to near boiling.

Let the milk cool, and add 2 big spoonfuls of plain yogurt.

Keep this in a warm place overnight. I wrap the plastic tub in a towel, and stick it in my crockpot. The next day it's yogurt.

              Hey girlie!

I used four cups of the Calorie Countdown Milk (2%) and heated it in my microwave (using the "beverage" feature) until it reached 110 - 115 degrees (I stirred it with a candy thermometer to get the temp). I poured it through a sieve a few times just in case there were lumps. Then I took out a little of the liquid and added one tablespoon of plain Dannon yogurt (it was the only one I found with no food starch). Mixed it up and then added it to the whole batch. Then I poured it into my little jars (seven jars), put it into my yogurt maker/warmer and waited eight hours. After that I put the lids on the jars and put them directly into the fridge to chill. It came out with a good consistency and was delicious with three strawberries chopped and put in with a teaspoon of Splenda.

The directions say that you can let them sit from six to ten hours -- whatever your preference is. I think the longer you let it set, the firmer it is.

              Yummy!

              Hope this helps.

I have made my own yougurt several times with carb countdown milk, reconsituted non-instant whole milk powder from health food store and soy milk...it seems that although it gets fimer the longer you leave it the tarter it gets.

the very best thick creamy results were from the non-instant whole milk powder and the highest carbs I'm sure....the soy milk was different I like that with a little powdered SF lemonade drink mix powder in it to make a lemon yougert which somehow appeals to my tastebuds ...I put a little raspberry sauce on it I made with raspberrys and splenda.

I make mine in a quart sized yogurt maker...also I noted be sure your starter yougurt is pretty fresh...the only time i had problems with it not working my starter was getting old and the milk just curdled no yougurt!!!

Greek and Turkish Yogurt is very thick - 10% fat, and sometimes strained to remove more watery components.

I can't wait to get to make my own yoghurt, yummy. (not there yet, am moving up slowly)

I've made my own before and I also love to strain it through cheesecloth or muslin for maybe half a day. The longer you strain it, the thicker/denser it gets. It results in the yummiest cheese. I also use it (strained, but not so thick) for making rich yoghurt dips and stirring in different spices & flavourings.

                    can't wait
