  • Pizza!

I made the Biker Goddess Pizza on Friday. I wish I had a camera, because it was really pretty as a picture.

    The recipe:

    4 oz softened cream cheese
    4 eggs
    1/3 cup heavy cream
    1/4 cup parmesan cheese (grated)
    1 tbs chives
1/2 tsp Italian or pizza seasoning
2 cups shredded cheese (I use mozzarella /cheddar mix)
1/2 tsp wet garlic or 1/4 tsp garlic powder
1/2 cup lowest carb tomato or pizza sauce
    1 cup mozzarella cheese
Toppings to taste (I use pepperoni, sausage, green olives, whatever!)

Beat together cream cheese and eggs till smooth.
Add cream, parmesan cheese and spices
Spray 13x9 glass baking dish with oil
Put 2 cups of shredded cheese in dish and pour egg mixt. over Bake at 375 for 30 minutes
Spread with sauce and then add your toppings
    Cover with mozzarella cheese
    Bake till browning and bubbly
Let stand for 5 minutes or so.

Now I made just a few changes. First off, I skipped the sauce and put fresh thinly sliced tomato on top to save carbs. I also cut the amount of cheese for the topping in half. Our toppings were pepperoni, tomato, onion (very thinly sliced, probably only 3 tablespoons worth) and 1/4 cup of spicy breakfast sausage.

It was amazing. Now, the edges were cripsy crunch, the pieces in the middle were a little droopy, but the flavor was still amazing. I think maybe I let it sit in the pan too long. Possibly, if I had taken it out and put it on a wire rack to cool, it wouldn't have gotten soggy? I'll have to try that next time.

I almost forgot to mention, hubby and I ate this with garlic butter. We drizzled a little on top after it came out of the oven. I thought I'd died and gone to heaven. If you like Sicilian style pizza, you'll really like this.

You can also use half the amount of cream cheese for the crust and it will turn out fine. IrishIrish used to divide the crust into thirds and bake them in round cake pans. Then she used to freeze the crusts for future use. I bake the crust in a jelly roll pan, divide into rectangles, and freeze for individual servings of crust.

You could probably do pretty well with replacing the tomato sauce with pesto...one of my favorite pizza's of all time was from Uno's and it was pesto-based instead of tomato sauce. The only problem there is you're probably adding a lot more fat and cals...ah well! Ya only live once...

I'll have to try cutting out some of the cream cheese. I thought about dividing it into smaller pizzas, but I really like that deep dish sicilian style thing I had going.

Pesto sounds good too. I had some really awesome Jersey Tomatoes so I couldn't resist. Next time I might try the pesto thing. Sounds tasty.

Miss Phode, go to Angelo's Italian Market and get a can of Escalon 6-in-1 ground tomatoes (1/2 cup is 4 net carbs). Add some dried basil, granulated garlic, a little freshly grated Romano cheese and a little Splenda. If possible, make sauce a day ahead for best flavor. The 6-in-1 tomatoes make a BIG difference in flavor as compared to regular store-bought.

I forgot to tell you that after adding all ingredients, put in a blender and blend until smooth. This also reminds me that I need to buy a lot more cans of 6-in-1 when I come to Venice after Thanksgiving.

Have you been to Angelo's since they moved?

The new store is really great.

                Re: Pizza!

Yeah, they opened up a couple of months before I moved. I went to their grand opening and told Angelo and his dad they were really "uptown" now. And I had them order a case of the 6-in-1 tomatoes for me as they only had a few on the shelves, and I knew I would not be back for a while. Going back to that store will be the real test of my willpower!

                  Re: Pizza!

I go there for the ribeye steaks. We were there on Tuesday, and the young guy said they got a new gelato machine. Yikes!

I love that place. They love my husband because he's 6'4" blonde haired blue eyed obviously not italian guy, and he always tries to speak Italian to them. They're always teaching him new things to say. It's too funny.
