  • Check out these bad boys! Cheese Danishes!

    I meant to take a pic of them on the pan but they were a little stuck to the wax paper (even though I oiled it) so I quickly scooped them off of there and put them in the bag. They LOOK amazing, I won't eat them till tomorrow though. Should I refrigerate them and then just pop them in the toaster oven in the morning to heat them up? Also, they are kinda crispy feeling on the edges right now, will they soften up to a more breadlike texture? If I like these I'm making regular rolls tomorrow for tuna sandwiches!

    Heheee seriously they look yum!
    I've been kinda lazy these last two weeks, not really baked much. But by the looks of those little beauties.....I wanna get crackin again!

    I think they would be fine in the fridge or else in an air tight tin, dark cupboard?

      I wish I could send you one!! Here is the recipe for the Revolution Rolls, and then at the end are the modifications to make it a danish

      Atkins Revolution Rolls (substitute for sandwich buns)
      makes 6 rolls.

      3 large eggs (1.8 )
      1 1/2 ounces cream cheese, softened (1.5)
      1/2 teaspoon onion powder (0.7)*
      1 pinch salt (0)
      1/8 teaspoon cream of tartar (0.3)

      Preheat oven to 300 degrees F. Line a cookie sheet with either wax paper or cooking parchment paper. If using wax paper, butter or oil it. Set aside

      Separate the egg whites from the egg yolks. To the egg yolks add the cream cheese and onion powder. Mix well and set aside.



      To the egg whites, add the cream of tartar and salt. Beat the egg whites until it forms very stiff peaks.

      Fold the egg yolks into the egg whites. Do not overmix because the egg whites will provide the "leavening" for the rolls.

      Using two tablespoons, drop the the mixture into 6 equal mounds onto your prepared cookie sheet.

      Bake for 30-40 minutes in the middle rack of your oven. Cool completely. Store in the refrigerator in an air tight container.

      *May replace the onion powder with 1 packet of Splenda. The carb count remains roughly the same per roll.

      Per 1 serving( 1 roll)
      Total carbs: 0.8 grams
      Fiber: 0 grams
      Net Carbs: 0.8grams
      Cheese allowance: .25 oz

      Note: The original recipe calls for 1 packet of Splenda. This is completely unnecessary. The addition of 1/2 teaspoon onion powder gives the Rolls more flavor (no onion taste) than the Splenda does. You can also add 1 tablespoon of a fiber supplement to the egg yolks if desired. Adjust your carb count if you do.

      cheese danish (revolution rolls)
      Use only 1/2 the amount of cream cheese in the recipe for the batter (trust me, it will work fine!) and don't use any garlic or onion powder, instead use a 1/2 packet of Splenda and a drop of vanilla, almond, or lemon extract. Drop the "rolls" onto your baking sheet. Meanwhile, mix 3 tablespoons of cream cheese with the remaining Splenda and a drop of vanilla, almond, or lemon extract. Drop 1/2 tablespoon for the cream cheese onto each 'roll'. DON'T mix the cream cheese in. It will sit on top of the batter and look funny, but that's okay. As the danish bakes, the cheese will 'settle' into it. It will look and taste like a cheese danish.

        Mmmmmm! I can't wait to make these. I'm boggled looking how incredibly yummy they look without being 20+ grams of carbs!

                  Ok I could not wait any longer! I had one and they are VERY good!! If you want it sweeter, I'd use a pack and half of splenda - it tastes good to me, but I've really been avoiding sweet stuff as a rule so my tongue isn't used to sugary things. Also, next time I make these I will use 1 oz cream cheese for the roll part and mix up 2 oz for the topping, I would like more of the cheese part. I will be making the regular rolls tomorrow for sure after this, they are great!!

                              Well I had some for breakfast today and they are DELISH. HOWEVER, they are NOT as filling as two scrambled eggs would have been. So, I'd say they are nice for a change but you definitely need food on the side with them unless you are a very very light breakfast eater. I am hungry when I wake up so I need something filling. I can't wait to make some for sandwich rolls though!!
